These Taco Black Bean Burgers are a feast for the senses: gorgeous deep brown and delightfully crunchy on the outside, yet tender and bursting with savory flavor on the inside. Studded with sweet corn and piled high with fresh avocados, juicy tomatoes, crisp lettuce, sharp onion, and a drizzle of hot sauce, all served on soft buns, these meat-free burgers have captivated even the most particular eaters in my home. A truly healthy and satisfying meal that everyone will love!

Ingredients

  

  • 4 cups or 2 cans black beans, drained and rinsed well, then drained again
  • 1 jalapeno stem and seeds removed and roughly chopped
  • 3 tablespoons roughly chopped onions
  • 1-3 cloves of garlic according to preference, roughly chopped
  • 2 tablespoons tomato sauce
  • 1 cup or more plain breadcrumbs
  • 1 cup frozen corn thawed
  • 1 egg
  • 1 teaspoon cumin
  • 1 tablespoon chopped fresh cilantro or parsley or 1 teaspoon dried cilantro or parsley flakes
  • 1 1/4 teaspoons salt
  • canola or peanut oil for frying
  • lettuce leaves for serving
  • avocado slices for topping
  • hot sauce for topping
  • soft rolls for serving

Instructions

 

  • Begin by preparing your aromatic base. Add the roughly chopped jalapeno (with stem and seeds removed for less heat), onions, and garlic cloves (adjusting quantity to your taste) to the bowl of a food processor fitted with a metal blade. This initial step ensures a fine and even chop for maximum flavor distribution.
  • Secure the lid and pulse the ingredients, stopping periodically to scrape down the sides of the bowl with a spatula. Continue pulsing until the vegetables are very finely chopped, forming a fragrant, almost paste-like mixture. This fine texture is crucial for the burger’s consistency.
  • Now, add half of the thoroughly drained and rinsed black beans to the food processor, along with all the seasonings (cumin, cilantro/parsley, salt) and tomato sauce. Pulse again, continuing to scrape down the sides of the bowl as needed. Your goal here is a mixture that resembles a thick, slightly chunky guacamole – cohesive enough to hold together but still with some texture from the beans. Avoid over-processing to prevent a mushy texture.
  • Transfer this vibrant bean and vegetable mixture to a large mixing bowl. Gently fold in the remaining whole black beans and the thawed frozen corn. This adds a lovely textural contrast to the patties. Finally, stir in the egg (acting as a binder) and the initial cup of plain breadcrumbs.
  • It’s time for the consistency test. Take a small amount of the mixture and try to roll it into a ball, then flatten it into a patty. It should hold its shape without sticking excessively to your hands or crumbling apart. If the mixture is too sticky or doesn’t hold, add one extra tablespoon of breadcrumbs at a time, stirring thoroughly after each addition. Continue this process until you achieve the desired patty-forming consistency. The amount of breadcrumbs can vary between batches due to bean moisture content, but typically, you’ll need at least 1 cup. The aim is a firm, workable mixture – not overly dry or crumbly.
  • Once your mixture is perfect, roll it into balls according to your preferred burger size: golf ball-sized for delightful sliders, peach-sized for classic standard burgers, or navel orange-sized for truly satisfying mega-burgers. Form them into even patties, ensuring they are about 1/2 to 3/4-inch thick.
  • Heat a heavy-bottomed skillet over medium-high heat. Pour in enough canola or peanut oil to cover the bottom by approximately 1/8-inch. Once the oil is shimmering and hot (but not smoking), carefully flatten each bean ball into a patty and slide it into the hot oil. Cook as many patties as you can comfortably fit without crowding the pan; this ensures even browning. Fry for about 3-4 minutes on each side, or until they achieve a beautiful deep brown color and a satisfying crunch on the outside.
  • Once cooked to perfection, transfer the crispy, flavorful patties to a platter lined with paper towels to absorb any excess oil. This helps maintain their delicious crunch.

To serve:

  • Assemble your burgers: place a cooked patty on a bed of crisp lettuce on the bottom half of a soft bun. Layer with generous slices of fresh avocado, a drizzle of hot sauce to your taste, and finally, complete it with the top half of the bun.
