  • 3 teaspoons SAF or instant yeast
  • 3 teaspoons kosher salt
  • 4 tablespoons sugar
  • 4 tablespoons extra virgin olive oil
  • 2 cups lukewarm water (16 ounces by weight or volume)
  • Nonstick cooking spray
  • 8 ounces extra sharp Cheddar cheese, grated (divided)
  • 3 small to medium sized fresh jalapeno peppers, sliced into 1/8-inch thick rounds

Instructions

To Mix Dough By Hand:

  1. Combine all ingredients, excluding the cheese and jalapeno toppings, in a large mixing bowl. Stir vigorously with a sturdy wooden spoon until a shaggy but cohesive dough forms. Cover the bowl with a clean towel and allow the dough to rest for 30 minutes. Turn the dough out onto a lightly floured countertop and knead it for approximately 10 minutes, or until it becomes smooth and elastic. Transfer the kneaded dough to a clean bowl, cover it with a damp towel, and let it rise in a warm, draft-free place until its size has doubled, typically about 2 hours.

To Mix Dough By Stand Mixer:

  1. Place all ingredients, except the cheese and jalapeno toppings, into the work bowl of your stand mixer fitted with the dough hook attachment. Set the mixer to its lowest speed and mix until a smooth, shiny, and elastic dough develops. Remove the bowl from the mixer, cover it with a damp towel, and allow the dough to rise in a warm, draft-free location until it has doubled in size, which usually takes around 2 hours.

To Mix Dough By Bread Machine:

  1. Add all ingredients, excluding the cheese and jalapeno toppings, to the pan of your bread machine, ensuring the dough paddle(s) are correctly installed. Select the “Dough” setting on your bread machine and press start. Once the dough cycle is complete, the dough will be ready for shaping as outlined in the next steps.

To Shape and Bake the Dough:

  1. Lightly spray two standard loaf pans with non-stick cooking spray and set them aside.
  2. Turn the risen dough out onto a clean work surface and gently form it into a neat, uniform mass. Divide the dough precisely in half. Then, divide each half into three equal pieces. Cover three of these pieces with a towel to prevent them from drying out while you work with the other three.
  3. Take one piece of dough and pat it into a rough oval shape. Using the side of your hand, press a distinct indentation along the entire length of the dough piece. Fold the dough over along this indentation and lightly roll it between your hands to form a thick rope, approximately 12 to 14 inches long. Repeat this process with the remaining two pieces of dough to create three ropes of roughly equal length. Line these three ropes up parallel to each other, with the ends facing you. Generously sprinkle about one-third of your grated Cheddar cheese and half of the sliced jalapenos over these ropes.
  4. Now, begin the braiding process. Gently grasp the end of the rope on the far left. Lift it towards the center, ensuring the far end remains on the counter, then cross it over the rope immediately next to it and lay it down. Next, grasp the end of the piece on the far right. Lift it towards the center (again, keeping the far end on the counter), cross it over what is now the center rope (which was the first one you moved), and lay it down. As you braid, gently tuck any stray jalapeno slices and grated cheese between the ropes to secure them. This “far left over center, far right over center” maneuver is the fundamental braiding technique you’ll repeat until the ends of the ropes become too short to continue the braid effectively.
  5. Once the ropes are too short to continue braiding, firmly pinch the ends together and tuck them neatly under the braid. Return to the center of the loaf and complete the braiding towards the opposite end (the top). When you reach that end, pinch the pieces together and tuck them under. Carefully transfer the beautifully braided loaf to one of your prepared loaf pans. Repeat the entire shaping process with the remaining dough to create a second loaf. Divide the remaining one-third of the grated cheese evenly and sprinkle it generously over the tops of both braided loaves.
