Slow-Cooker Five Spice Pork Roast

Ingredients

  • 1 boneless pork roast (2 to 2-1/2 pounds)
  • 1 tablespoon Chinese Five Spice Powder
  • Kosher salt and cracked black pepper, to taste
  • 1 tablespoon peanut, canola, vegetable, or olive oil
  • 5 small peeled sweet potatoes (about 1-1/2 lbs, cut into 1-inch chunks)

For serving:

  • Hot cooked rice
  • Chopped cilantro or parsley
  • Finely chopped green onions
  • Spicy Chinese Chili Crisp, Chili Garlic Sauce, or Chinese Black Bean Garlic Sauce (optional)

Instructions

  • Scatter the cubed sweet potatoes evenly in the bottom of a slow-cooker crock. Place the lid securely and set the slow-cooker to HIGH.
  • Generously sprinkle the pork roast on all sides with Chinese Five Spice powder, kosher salt, and cracked black pepper. Take a moment to rub the seasonings thoroughly into the roast, ensuring an even coating.
  • Place a heavy-bottomed skillet, such as a stainless steel or cast-iron pan, over high heat. Once hot, swirl the oil to coat the bottom of the pan. Carefully place the seasoned pork roast into the hot pan. Resist the urge to move the roast until it naturally releases from the pan and develops a deep golden-brown crust on the cooked side. Rotate the roast to an un-browned area and repeat this searing process. Continue until the entire surface of the pork roast is beautifully browned. Using tongs, carefully transfer the seared pork roast to rest on top of the cubed sweet potatoes in the slow cooker. Replace the lid. Cook on HIGH for 4-5 hours or on LOW for 7-9 hours. The pork roast is perfectly done when an instant-read thermometer inserted into the thickest part registers 145°F (63°C).

  • Carefully remove the cooked pork roast from the slow cooker and transfer it to a cutting board. Lightly tent it with aluminum foil and allow it to rest for approximately 8 minutes before slicing. Slice the pork roast into 1-inch thick chops or thick slices. To plate, add a generous scoop of hot, cooked rice to each bowl, spoon some of the tender sweet potatoes and flavorful pan juices over the rice, and then arrange the sliced pork. Garnish with finely chopped green onions, fresh cilantro or parsley, and if desired, a drizzle of spicy sesame oil or a dollop of your preferred chili sauce for an extra kick.
