It was an immense pleasure and privilege to partner with the renowned Cabot Creamery Cooperative for an exclusive, insightful dairy farm tour of Dellavale Farm. Every photograph captured, every opinion shared, and indeed, every ounce of my long-standing cheese obsession remains, as always, authentically my own.
The invitation arrived during what many consider the most enchanting season of the year, culminating in a truly breathtaking October day. I found myself on my way to Dellavale Farm, nestled serenely within the picturesque Mohawk Valley region of New York State. This cherished family farm is masterfully operated by the incredibly hospitable Terri Phillips, a fourth-generation dairy farmer, and her devoted husband, Tom Nelson. Their dedication to their land and their animals is palpable, creating an atmosphere that is both welcoming and deeply inspiring.
Dellavale Farm proudly stands as a vital member of the Agrimark/Cabot Creamery Cooperative, a testament to its unwavering commitment to quality and community. In March of 2019, the farm was officially recognized as a Century Farm – a profound distinction that signifies over a century of continuous operation by the same family. This remarkable legacy began with Terri’s great-grandfather, affectionately known as Bog, and has seen the Phillips family consistently provide high-quality dairy to countless tables for more than a hundred years. This deep-rooted tradition continues today, with Terri’s sisters, their spouses, and their children all actively involved in the farm’s daily operations, ensuring that the spirit of family farming thrives for generations to come. This multi-generational commitment not only preserves invaluable agricultural heritage but also strengthens the fabric of the local community, ensuring sustainable practices and exceptional dairy products.
I don’t know about you, but in my humble opinion, those who dedicate their lives to providing us with such exquisite cheese are truly among the greatest benefactors. Indeed, blessed are the cheesemakers, my friends, for they bring immeasurable joy to our plates and palates.
For as long as I can remember, I have enthusiastically shared with anyone willing to listen my profound adoration for Cabot’s Seriously Sharp Cheddar Cheese. It’s more than just a cheese; it’s an integral part of my family’s culinary narrative. From the simplest after-school snack, a quick bite that brings comfort and joy, to serving as a crucial, flavor-elevating component in countless family favorite meals, this cheddar holds a special place. Its robust, tangy profile and perfectly firm texture make it indispensable. And while its iconic taste is paramount, I must confess a particular fondness for the distinctive plaid wrapper that encases every block of Seriously Sharp Cheddar, a visual cue that has become synonymous with quality and tradition. It’s a small detail, but one that adds to the overall charm and recognition of a truly exceptional product.
The opportunity to actually meet one of the dedicated farmers whose hard work and passion are directly responsible for producing that glorious cheese – the very cheese my children playfully consider their birthright – was an experience nothing short of extraordinary. It offered a rare glimpse behind the curtain, connecting the delicious product on our plates directly to the hands that nurture the land and the animals. This deeply personal encounter transformed a familiar food item into a story of dedication, family, and heritage, making every future bite of Cabot cheddar even more meaningful.
Our visit to Dellavale Farm, however, extended beyond merely meeting the wonderful folks behind my best-loved food. A significant highlight of the day was witnessing the breathtaking new barn art that now graces one of their prominent barns. This magnificent mural is not just a painting; it’s a landmark, clearly visible and impossible to miss for anyone driving along the New York State Thruway, particularly between exits 26 and 27. Its strategic location transforms an ordinary drive into an unexpected encounter with art and agricultural pride, making Dellavale Farm a memorable point of interest for travelers and locals alike.

Oh, that barn! Let me tell you, it’s a sight to behold. The entire structure is painted in a vibrant, unmistakable plaid pattern, perfectly mirroring the iconic Seriously Sharp Cheddar wrapper. The sheer audacity and brilliance of it captivated me entirely. I instantly declared that I absolutely need a plaid barn in my life. Were it not for the fact that I’ve been, shall we say, permanently retired from any house-painting endeavors after a few memorable mishaps, I would undoubtedly be out there right now, brush in hand, attempting to replicate Terri’s plaid masterpiece on my own property. It’s more than just a painting; it’s a bold statement, a celebration of heritage, and a truly unforgettable piece of roadside art that perfectly encapsulates the spirit of Dellavale Farm and Cabot Creamery. This unique visual not only serves as a vibrant advertisement but also as a charming expression of farm identity, deeply ingrained in the landscape and the hearts of those who pass by.

Alas, it seems I’ll have to content myself with simply admiring Terri’s magnificent barn, a beacon of creativity and agricultural pride. Its cheerful plaid pattern serves as a constant reminder of the dedication and spirit found at Dellavale Farm, making it a beloved landmark in the Mohawk Valley. Every time I think of it, a smile comes to my face, appreciating the simple yet profound beauty of this unique farm art.
The morning of our visit could not have been more perfectly orchestrated, even if we had ordered it à la carte from a celestial menu. It was the quintessential idyllic New York State fall morning. The autumn leaves were ablaze in their full, glorious spectrum of reds, oranges, and golds, creating a breathtaking canopy against the crisp blue sky. We were standing on a gentle hillside, enveloped by the serene beauty of the countryside, surrounded by robust barns that spoke of decades of tireless work, and the tranquil presence of healthy dairy cows grazing peacefully. Adding to this already picturesque experience, we were graciously escorted by Terri Phillips, a remarkable fourth-generation dairy farmer whose incredible sense of humor and deep-seated commitment to her community shone through every anecdote and explanation. Her passion for her work and her family’s legacy was infectious, making the tour not just informative but truly heartwarming. This immersive sensory experience, complete with the earthy scent of the farm and the gentle sounds of the animals, provided a profound connection to the origins of our food and the dedicated individuals who produce it.
Over the years, my blog has happily featured a myriad of recipes utilizing various Cabot products. I had the distinct pleasure of developing popular dishes such as the rich Instant Pot Garlic Beef Stroganoff and the vibrant Spicy Bacon Cheddar Pasta Salad specifically for Cabot Creamery. Beyond these commissioned recipes, it’s safe to say that practically any recipe I’ve ever shared that calls for cheddar cheese has almost certainly featured Cabot Seriously Sharp Cheddar. Its consistent quality, exceptional flavor, and reliable melting properties make it my absolute go-to choice, elevating every dish from good to truly outstanding. This steadfast preference stems from a deep trust in Cabot’s commitment to superior dairy products, a quality that shines through in every bite and every dish.
However, the magnetic charm of Terri, the inspiring beauty of her plaid barn, and the rich legacy of her family’s cheese heritage were not the sole reasons for our thorough enjoyment and profound appreciation of the day. There was an even more delightful experience awaiting us, one that truly brought the farm to life in the most endearing way imaginable, further cementing our connection to Dellavale Farm and the wonderful people and animals that call it home.

As our tour progressed, Terri and her effervescent niece, Erika, posed the question that immediately sparked an explosion of joy: “Would you like to go see some of the cows in the pasture?” My friend and esteemed colleague, Brandy, who pens the fantastic blog Nutmeg Nanny, instantly broke into an unrehearsed, exuberant happy dance. Her infectious enthusiasm was a perfect reflection of the excitement we all felt. And truly, upon seeing them, we all agreed: these cows were absolutely magnificent! Their healthy coats, calm demeanor, and gentle eyes immediately captivated us, making it clear that these weren’t just any farm animals; they were truly special inhabitants of Dellavale Farm.
Allow me, then, the distinct pleasure of introducing you to what we affectionately dubbed the “Dellavale Supermodels!” These utterly captivating bovine beauties, with their serene presence and inherent grace, proudly graze the lush green hillsides and expansive pastures of Dellavale Farm. From the moment we laid eyes on them, these gentle giants utterly stole our hearts, embodying the peaceful charm and natural beauty of a working dairy farm. Their presence added an unforgettable layer of warmth and wonder to our already delightful farm experience.

Amongst the herd, one particular cow stood out, proving herself to be an absolute “attention hog” – or perhaps, given her species, an “attention cow” is a more fitting phrase. From the very second we gingerly stepped into the expansive pasture, she was undeniably “on.” She was the first of the ladies to confidently trot over to greet us, her curiosity evident in her soft, dark eyes. Having established herself as the initial welcoming committee, she seemed to have unilaterally decided that she was unequivocally going to receive the lion’s share of affection and adoration. Her playful demand for attention was utterly charming, making her an instant favorite and a true star of our farm tour. It was clear she was accustomed to human interaction and relished the opportunity for a friendly scratch behind the ears.

Indeed, her demeanor was so assertive and playful, it was almost as if she was communicating directly with us, her eyes twinkling with personality. We imagined her saying, in a wonderfully sassy bovine tone, “Hey! Step back, darlings, there’s plenty of camera for all of us, honey!” She clearly commanded the spotlight with an undeniable presence. And as we adjusted our lenses, she seemed to strike various poses, perhaps offering a silent, yet confident, directive: “Be sure to get my good side.” This was no ordinary cow; this was the embodiment of “Bovine Blue Steel,” a natural model in her element, completely at ease with her audience and basking in the admiration.

Watching her engage with us, with her mouth slightly agape as if mid-chuckle, was truly delightful. It was undeniably the dairy cow equivalent of a toothy grin, a charming expression that perfectly captured her friendly and engaging personality. Her playful disposition melted any lingering skepticism about cows having individual personalities, proving that each one possessed a unique character and charm.

Then there was the serene beauty, her gaze contemplative and gentle, earning her the affectionate moniker, “The Moo-na Lisa.” Her quiet elegance and timeless appeal captured our attention, suggesting a depth of wisdom in her calm eyes. She embodied a peaceful artistry, a living portrait of tranquility within the bustling activity of the farm.

Simply put, she was just a pretty cow, contentedly hanging out in a beautifully verdant field, bathed in the soft, golden light of a lovely day. The scene was one of pure, unadulterated serenity, embodying, in short, heaven itself. Every element—the gentle breeze, the rich green grass, and her peaceful demeanor—combined to create a moment of perfect rural bliss.

Another striking bovine beauty posed with a tilt of her head, as if responding to our admiration with a coy, “Oh, you mean me?” Her eyes, surrounded by naturally darker patches of fur, gave the distinct impression that she had thoughtfully applied a smoky eye for our visit. Her dramatic, yet entirely natural, makeup was simply stunning, adding another layer of charm to these already captivating Dellavale Supermodels. It was a delightful moment, personifying the animals and highlighting their unique attractiveness.

And my dear friend Brandy? Well, it’s fair to say she was utterly, completely, and irrevocably in love. Her face lit up with an undeniable joy as she interacted with these gentle giants, her earlier happy dance finding its true expression in the warmth and connection she felt with the Dellavale Supermodels. Her genuine affection for the cows was heartwarming to witness, underscoring the universal appeal of these magnificent creatures and the genuine bond that can form between humans and animals on a nurturing farm environment. It was a moment of pure, unbridled happiness that truly encapsulated the spirit of our visit.

To truly underscore the perfection of the day, our tour was accompanied by the most charming, four-legged escort imaginable. Meet Cooter, Terri’s sister’s beloved 13-year-old dog. Years ago, Cooter, with an independent spirit and a heart full of loyalty, decided that the farm was his true calling and adopted it as his permanent home, transitioning into the role of a quintessential farm dog. This sweet, senior boy, with his gentle amble and calm demeanor, faithfully walked alongside us, from our very first steps onto the welcoming grounds of Dellavale Farm until the moment we reluctantly climbed back into our cars to depart. His unwavering companionship added an extra layer of warmth and authenticity to our already memorable experience, solidifying the impression of Dellavale as a place where every living creature is cherished and belongs.
As a final gesture of their incredible hospitality and generosity, Terri thoughtfully sent each of us home with a substantial brick of the exquisite Cabot cheese, ensuring our culinary journey continued. Additionally, she provided some prime beef from her own farm, a true taste of Dellavale’s wholesome produce. More valuable than any tangible gift, however, was the profound and happy knowledge we carried away: that Cabot Creamery Cooperative is built upon the dedication of truly great people, like the Phillips family, who pour their heart and soul into creating their consistently excellent cheese and other farm products. This visit reaffirmed my belief in supporting family farms and cooperatives that prioritize quality, community, and ethical practices. It was a day that transcended a simple farm tour, leaving a lasting impression of genuine passion and delicious heritage.
