One Hour Bread

This delicious and incredibly easy recipe delivers the ultimate homemade sandwich bread in just one hour. It’s simple enough for beginning bakers to achieve fantastic success, yet so delicious that even experienced bakers will find themselves turning to it again and again! Adapted from ‘The Tightwad Gazette’.

Ingredients

  • 6 cups all-purpose flour (approximately 1 pound, 9.5 ounces by weight)
  • 2 Tablespoons instant yeast (also known as Bread Machine Yeast)
  • 2 Tablespoons sugar
  • 1 Tablespoon Kosher salt (if using table salt, reduce to 1 ½ teaspoons)
  • 2 cups very warm water (ideally about 120°F / 49°C)
  • 2 Tablespoons extra virgin olive oil

Instructions

Mixing the dough by Stand Mixer (My Preferred Method):

  1. Combine flour, instant yeast, sugar, and salt in the bowl of a stand mixer fitted with a dough hook. Mix on low speed for 30 seconds to combine the dry ingredients evenly.
  2. With the mixer running on low speed, slowly pour in the warm water and olive oil simultaneously. Continue mixing until the dough comes together, pulls away from the sides of the bowl, and becomes smooth and elastic, which typically takes about 4 minutes.
  3. Remove the bowl from the stand mixer, scraping any dough that remains on the dough hook back into the bowl. With your hands, gently pull the dough from the bowl and form it into a smooth ball. Return the dough ball to the bowl, cover it with a clean tea towel, and let it rise in a warm place for 15 minutes.

Mixing the dough by Food Processor:

  1. Combine flour, instant yeast, sugar, and salt in the bowl of a food processor fitted with a metal blade or dough blade. Pulse 10 times to evenly distribute the ingredients.
  2. With the food processor running continuously, slowly pour the warm water and olive oil into the feed chute. Continue processing until the dough forms a cohesive ball that gathers around the blade.
  3. Allow the dough ball to spin in the food processor for approximately 20 seconds to further develop gluten, then turn off the machine. Remove the dough, form it into a smooth ball, and place it in a lightly oiled mixing bowl. Cover with a clean tea towel and let rise in a warm place for 15 minutes.

Mixing the dough by Hand:

  1. In a large mixing bowl, combine flour, instant yeast, sugar, and salt using a whisk or fork to ensure they are well mixed.
  2. Pour the warm water and olive oil into the flour mixture. Use a sturdy spoon or spatula to combine the ingredients until a shaggy, cohesive dough forms.
  3. Turn the dough out onto a clean, lightly floured surface and knead vigorously for 8 minutes. If you find it difficult to knead in the bowl, transferring it to a counter top makes the process easier. After kneading, return the dough to the bowl, cover with a clean tea towel, and let rise in a warm place for 15 minutes.

To Shape the Loaves:

  1. Turn the risen dough out onto a clean, lightly floured surface and divide it evenly in half.
  2. Form each half into a round ball and place them 5-6 inches apart on a baking sheet lined with parchment paper or a silicone baking mat (Silpat), or one that has been lightly greased.
  3. Alternatively, if you prefer traditional rectangular loaves, lightly grease two standard loaf pans. Form each half of the dough into an oval shape roughly the size of your loaf pan before gently easing them into the prepared pans.
  4. Using a sharp knife, make a shallow slash (about ¼ of an inch deep) across the top of each loaf. This allows steam to escape during baking, promoting a better rise and preventing uncontrolled cracking.

To Bake the Loaves:

  1. Arrange your oven racks so that one is on the very bottom and the other is positioned in the center of the oven.
  2. Place the baking sheet with the shaped loaves on the center rack. On the bottom rack, place a bread or cake pan filled with very hot tap water. This creates steam in the oven, which contributes to a beautiful, crisp crust and helps the loaves rise.
  3. Close the oven door and immediately turn your oven on to 400°F (200°C). It is absolutely critical that you start this process in a cold oven! Do not preheat the oven beforehand.
