Ingredients

  • 1 medium red onion
  • 3/4 cup rice vinegar (not seasoned)
  • 2 cups red or black seedless grapes
  • 8 crowns broccoli
  • 2 small to medium sized carrots
  • 3/4 to 1 cup mayonnaise (start with the smaller amount, adjust to desired creaminess)
  • 1 tablespoon sugar (raw sugar preferred)
  • 2 teaspoons kosher salt (or more to taste, divided)
  • black pepper to taste (recommend 1 full teaspoon of freshly ground black pepper)

Instructions

  1. Prepare the Pickled Onions: Halve the red onion, peel it, and make careful cuts from near the root end towards the blossom end at approximately 3/4-inch intervals, ensuring the root end remains intact to hold the layers together. Turn the onion 90 degrees and slice across these cuts to create thin, crescent-shaped slices, about 3/4-inch long. Transfer these sliced onions to the bottom of a large mixing bowl. Sprinkle with 1 teaspoon of the kosher salt and pour the rice vinegar over the onions. Stir well to coat, then let stand while you prepare the remaining ingredients. *Don’t Waste Those Broccoli Stems! If you don’t have an immediate use for the leftover broccoli stems, simply cut them into roughly 1-inch pieces. Store them in a resealable freezer bag and stash them in your freezer. They’re perfect for adding to your next batch of cream of broccoli soup, enhancing its flavor and texture. In my opinion, the best cream of broccoli soup is generously packed with tender broccoli stems!
