Hearty Calico Beef Bacon Bean Bake

Hearty Calico Beans: Beef, Bacon, and Bean Casserole for comforting fall and winter meals

Calico Beans: The Ultimate Beef, Bacon, and Bean Casserole for Cozy Comfort

Calico Beans – a rich and hearty casserole featuring savory beef, crispy bacon, and a medley of beans – stands as the epitome of comfort food, offering both incredible flavor and effortless preparation. This robust dish is perfect for chilly evenings and busy days, promising warmth and satisfaction with every spoonful.

As the vibrant hues of summer fade into the golden glow of autumn, do you feel that delightful shift in the air? The lazy, sun-drenched days give way to crisper breezes, school bells ring once more, and a familiar sense of cozy anticipation settles in. For many, this seasonal transition brings with it a yearning for warmth, comfort, and, most importantly, food that nourishes not just the body, but also the soul.

This time of year always makes my heart sing. I adore the fashion transformation – the sweaters, thick socks, sturdy boots, and soft scarves – but even more than the wardrobe (which, to my budget’s chagrin, I love far too much!), I live for the culinary evolution. While summer, despite its relaxed facade, often means a flurry of canning and food preservation, fall ushers in a different rhythm. It’s a season of contemplative cooking: bubbling stewpots, slow-simmered meals, the comforting aroma of freshly baked bread, and rich, hearty soups that infuse warmth into every fiber of your being.

Fall, with its jewel-toned leaves, pumpkin patches, versatile butternut squash, and the perfect excuse to curl up with a good book, is undeniably my favorite season. I know the back-to-school hustle, whether you’re navigating traditional schedules or homeschooling, can feel like a whirlwind of madness. Yet, amidst the rush, there are those precious moments of blissful calm – those “ahhhhhhh” instances that make it all worthwhile.

You know the feeling: perhaps you’ve just dropped off four children at three different activities, conquered a daunting list of errands, and folded what feels like a mountain of laundry. As you finally sink into your favorite chair, a wave of peaceful relief washes over you. Ahhhhhhh. Or it’s Friday night, the school week is complete, the house is tidied, and your head finally meets the pillow. Oh, ahhhhhhh. These moments of respite are vital, and often, they are amplified by the simple pleasure of good food.

Many of my cherished fall “ahhhhhhh” moments are indeed food-related. Imagine this: you’ve successfully guided the kids through their daily lessons, tackled a good portion of housework, and completed a couple of days’ worth of writing and photography tasks. Then, you effortlessly slide a pan of today’s featured recipe – our glorious Calico Beans – into the oven. With the comforting aroma beginning to fill the house, you step outside to rake leaves, plant garlic, or engage in any outdoor activity that allows for a long, satisfying stretch of time in the crisp autumn air. It’s a truly good day.

Returning indoors, a little damp and wonderfully chilled from your labors, you open the door to be greeted by the warm, inviting fragrance of bubbling hot Barbecue Beef, Bacon, and Bean Casserole. It’s a sensory welcome, almost as if the dish itself is murmuring, “Excellent work out there! Come in, get cozy. Grab a bowl and a spoon, you happy human, you.” The internal warmth and profound comfort this dish provides are truly wasted in the summer heat, but come fall and winter, it gets a serious, well-deserved workout in our kitchen.

This dish is a family favorite, and my nine-year-old son particularly loves to help prepare it. He eagerly breaks up the beef in the pan, stirs the bacon to perfection (and always advises me to save the precious bacon grease for our cornbread!), and combines all the ingredients before they go into the baking dish. It’s easily his favorite recipe to assist with, and for good reason.

While I typically shy away from gendered descriptions for food, I must confess, as someone feeding six hungry men regularly, if I can’t call this a “man-pleasing dish,” then who can? This truly is a MAN-PLEASING dish! (And, for the record, it’s woman-pleasing too, but my earlier statement is backed by sheer statistical evidence within my household.) My son understands that the sooner this deliciousness starts cooking, the sooner he can pile it high on his plate and dig in. He’s no fool. Let me count the ways Calico Beans will bring joy, perhaps even tears of happiness, to the men (and everyone else!) in your life:

  • It’s packed with savory beef.
  • It features irresistible, crispy bacon.
  • It’s loaded with a delightful mix of beans.
  • It’s bathed in a rich, tangy barbecue sauce.
  • Its versatility knows no bounds: enjoy it with a fork or spoon, scoop it onto tortilla chips or Fritos, serve it alongside a wedge of cornbread or a piece of toast, or savor it just like chili. Any method you devise to get it to your mouth is the right one!
  • It’s the quintessential game-day feast, a perfect addition to any party buffet, or the ultimate fuel after a touch football match, a Nerf war, or a faux-American Ninja Warrior course. In essence, it’s the ultimate hearty, satisfying meal for any occasion.

This recipe yields a generous amount, so don’t be alarmed by the volume! The wonderful news is that this large batch can be easily divided into individual meal-sized portions and frozen. Imagine the convenience of having homemade, comforting meals ready to reheat on those nights when cooking feels impossible, but you need something substantial to sustain you as you juggle home, work, and various activities. Having a container of Calico Beans tucked away in the freezer is like having a delicious, ready-made hug waiting for you.

If the idea of baking a 9×13-inch pan and an additional 8×8-inch pan of bubbly, beefy, bacony, beany deliciousness seems overwhelming, you can certainly halve the recipe. However, don’t come crying to me when you discover your appetite for this incredible dish far outlasts your supply!

Expert Tips and Variations for Your Calico Beans

  • **Bean Substitutions:** If butter beans or kidney beans aren’t to your taste, feel free to swap them out for an equivalent amount of beans you prefer. For example, you can substitute 2 cups of cooked (or 1 can of) pinto beans, black beans, navy beans, or cannellini beans. If you’re not fond of traditional pork and beans, you can easily use homemade or store-bought baked beans instead, tailoring the flavor profile to your liking.
  • **Alternative Meats:** This casserole is equally delicious when made with ground venison or elk, offering a rich, gamey depth of flavor that complements the barbecue sauce beautifully. I imagine it would be pretty fantastic with any lean red game meat you enjoy.
  • **Poultry Option:** For a lighter alternative, Calico Beans are also amazing when prepared with ground turkey! The leaner meat still absorbs all the wonderful flavors of the sauce and beans.
  • **Managing Picky Eaters:** If you’re dealing with discerning palates, mince the onions very finely if you want them to virtually ‘disappear’ into the dish during cooking. For those who might still object to even tiny pieces, you can replace the chopped onion with 1 ½ teaspoons of onion powder, mixed in with the rest of the ingredients before baking.
  • **Speedy Sauce Solution:** To make Calico Beans even faster on a busy weeknight, you can opt to use your preferred bottled barbecue sauce in place of the homemade sauce ingredients. Both variations are included in the recipe below, giving you flexibility.
  • **Cooking Versatility:** Calico Beans offer fantastic versatility in preparation! They can be baked in the oven for a classic casserole experience or prepared in the slow-cooker for a hands-off approach. Both methods yield wonderfully tender and flavorful results, and both variations are detailed in the recipe.

Ingredients

For the Homemade Barbecue Sauce (Optional: You can use 3 cups of your favorite purchased BBQ sauce instead):

  • 1 cup brown sugar
  • 1 cup ketchup
  • 2 tablespoons cider or white wine vinegar
  • 2 teaspoons dried mustard powder
  • 1/4 teaspoon liquid smoke (tasty but optional)
  • 2 cloves garlic, peeled and minced or pressed
  • Freshly ground black pepper to taste

For the Casserole:

  • 1 batch barbecue sauce (homemade or 3 cups purchased)
  • 2 pounds sliced bacon
  • 2 pounds lean ground beef (or ground venison, elk, or turkey)
  • 1 small onion, peeled and finely chopped (or 1 1/2 teaspoons onion powder)
  • 6 cups butter beans (or 3 cans, drained)
  • 6 cups kidney beans (or 3 cans, with liquid)
  • 4 cups pork and beans (or 2 cans, with liquid)

Instructions

To Make the Sauce:

  1. Stir all of the sauce ingredients together in a heavy-bottomed saucepan over medium-high heat. Stir frequently until the mixture reaches a boil. Boil gently for one minute, then remove from the heat and set aside.

To Make the Casserole Mixture:

  1. Preheat your oven to 325°F (160°C) if baking immediately.
  2. Stack the two pounds of bacon and cut across the slices to create 1/2-inch wide strips. In a large skillet or Dutch oven, fry the bacon, stirring frequently, until it is crisp and golden brown. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate to drain. Carefully drain the bacon grease from the pan, reserving it if desired for other flavorful dishes like cornbread.
  3. Return the pan to medium-high heat. Add the ground beef, breaking it up with a spoon. If using fresh onion, add it at this point. Continue to cook, stirring and breaking up the meat, until the beef is thoroughly browned. If necessary, drain any excess fat from the meat.
  4. In a very large mixing bowl, combine the prepared barbecue sauce, cooked beef, crispy bacon, butter beans, kidney beans (with their liquid), and pork and beans (with their liquid). Stir all ingredients together until they are thoroughly combined and evenly coated.

To Bake in the Oven:

  1. Divide the mixture evenly between a 9x13x2-inch baking pan and an 8x8x2-inch square baking pan.
  2. Bake, uncovered, for 1 hour, or until the casserole is very bubbly around the edges and heated through.

To Make in the Slow-Cooker:

  1. Spray the inside of your slow-cooker crock insert with non-stick cooking spray.
  2. Pour the entire mixture into the slow-cooker insert, cover, and cook on LOW for 4 to 6 hours, or until the casserole is piping hot and bubbly throughout.
  3. Store any leftovers tightly covered in the refrigerator for up to 3-4 days. For longer storage, divide into individual meal-sized portions and freeze in airtight containers for up to 6 months. Reheat frozen portions with a dash of water in a covered saucepan on the stove or in the microwave until thoroughly hot.
