The true test of our burgeoning friendship, however, came on the flight home. Jessica was seated about five rows ahead of me, on the opposite side of the aisle. As I did my usual people-watching ritual during boarding, my gaze landed on a particularly disheveled passenger. This individual looked as though they hadn’t encountered a shower in at least a month or two, meandering down the aisle, eyes scanning the seat numbers. Then, with a definitive “PLUNK!” he collapsed into the seat directly beside Jessica. It was a completely full flight, offering no escape.

Ingredients
For the Pizzas:
- 4 tablespoons olive oil or neutral oil with a high smoke point like grapeseed (not extra virgin, peanut, or canola, divided)
- 1 batch of dough from The Best Pan Pizza post
- 2 1/2 cups shredded or cubed leftover turkey
- 1 1/2 cups barbecue sauce
- 1 1/4 cups shredded mozzarella cheese
- 1/2 cup shredded Pepper Jack cheese
- 1/4 cup shredded Cheddar cheese
Optional but tasty:
- fresh cilantro leaves
- sliced black olives
- pickled red onions
- slices or cubes of ripe avocado
- thin slices of fresh jalapeno peppers
- thinly sliced green onions (scallions)
Instructions
To Prepare the Pizzas:

Preheat oven as high as it will go, preferably to 550°F (287°C). Remove plastic wrap from the pans containing the pizza dough. The dough should now have spread itself (or nearly spread itself) to the edges of the pan. Gently lift the edges of the dough to stretch it toward the sides of the pan if necessary. This also helps to release any trapped air underneath the dough. If you notice any large air bubbles, simply nudge them down with the back of a knuckle.

In a medium mixing bowl, toss together the shredded or cubed turkey with the barbecue sauce until evenly coated. Divide this mixture and spread half on each pizza crust, extending it all the way to the edges of the dough. Next, evenly distribute the combined mozzarella, pepper jack, and cheddar cheeses over each pizza, ensuring coverage right to the edge.

Carefully place the pizzas into the hot oven and bake for 12-20 minutes. Baking time may vary depending on your oven and desired level of doneness. You can check the underside of the pizza crust for crispness and color by gently lifting an edge with a flexible spatula (like a fish turner). A perfectly finished pizza will boast a crisp, deep-brown bottom and a bubbly, golden- to deep-golden brown top. I typically remove my pizzas when the edges have developed some deeply caramelized (and lightly charred) spots, and the cheese has achieved beautiful dark brown bubbles.

Once baked, use your flexible spatula to carefully slide the pizza onto a cutting board. At this point, you can adorn it with any of your remaining desired “trashed up” toppings. Allow the pizza to rest for 5 minutes before slicing it into wedges. After slicing, let it rest for another 3 minutes without moving or prying the pieces apart. This crucial resting time allows the cheese to set and the flavors to meld, ensuring a perfect slice every time.
