And oh, am I glad I did.

Spinach Omelet Grilled Cheese

Ingredients

  • 1 teaspoon canola oil
  • 3 cups raw baby spinach
  • 2 cloves garlic, peeled and minced or pressed through a garlic press
  • 2 eggs
  • 1 tablespoon milk
  • 1 tablespoon diced or chopped fully cooked ham
  • 4 slices LAND O LAKES® Deli American Cheese
  • 2 slices hearty whole grain sandwich bread
  • 2 tablespoons unsalted butter, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Place a non-stick skillet over medium-high heat. Add the canola oil and swirl to coat the pan evenly. Toss in the raw baby spinach with a pinch of kosher salt and stir with tongs until it begins to wilt. Add the minced or pressed garlic and toss well, continuing to cook until the spinach has fully wilted and the garlic becomes wonderfully fragrant, about 2-3 minutes. Transfer the sautéed spinach to a plate and set aside. Carefully wipe the pan clean with a paper towel. Prepare your sandwich by laying one slice of the LAND O LAKES® Deli American Cheese directly over one slice of the hearty whole grain sandwich bread on a heat-proof surface.
  2. In a small bowl, beat the eggs vigorously with the milk and a pinch of kosher salt until the mixture is quite loose, frothy, and uniform in color, ensuring no streaks of white or yolk remain. Return the cleaned pan to the burner, reducing the heat significantly to low. Add 1 tablespoon of the unsalted butter to the pan and allow it to melt completely, swirling to coat the bottom. Pour the beaten eggs into the pan. Using a flexible silicone spatula or scraper, gently stir and lift the cooking egg from the edges, tilting the pan as you do so. This technique allows the liquid, uncooked egg mixture to flow underneath the already-cooked portions. Spoon the reserved garlicky spinach mixture onto the center third of the omelet. Sprinkle the diced or chopped fully cooked ham evenly over the spinach, and then lay one slice of LAND O LAKES® Deli American Cheese on top of the ham and spinach. Carefully fold the empty top and bottom one-third portions of the omelet over the filling, creating a neatly wrapped package. Gently slide the completed omelet directly onto the cheese-covered slice of bread you prepared earlier. Place the remaining two slices of deli American cheese on top of the omelet, then cap it all with the second slice of hearty whole grain sandwich bread.
  3. While the sandwich is assembled, place the remaining 1/2 tablespoon of butter into the pan and let it melt over medium-low heat. Spread the final 1/2 tablespoon of butter evenly over the top slice of the assembled sandwich bread. Once the butter in the pan is melted and shimmering, carefully transfer the sandwich to the hot pan, buttered-side down. Cook until the bottom slice of bread achieves a beautiful, golden-brown crust, typically 3-5 minutes, depending on your stove and pan. Using your hand to gently hold the sandwich together (or pressing down lightly with a spatula), carefully slide a sturdy spatula underneath the sandwich and flip it over with a gentle motion. Continue to cook on the second side until it is also lightly golden brown. To ensure the cheese melts perfectly and becomes gloriously gooey, add about 1/2 teaspoon of water to the pan (away from the sandwich), immediately place a tight-fitting lid on the skillet, and raise the heat to high for about 30 seconds to create steam. After 30 seconds, remove the lid and allow the steam to escape, cooking for one more minute to re-crisp the bottom slice of bread. Carefully transfer the piping hot Spinach Omelet Grilled Cheese to a cutting board. For the best enjoyment, slice it in half diagonally before serving immediately.
