Like many of the world’s most cherished Italian-inspired dishes, the beauty of this Slow-Cooker Italian Shredded Pork lies not in its complexity, but in the thoughtful approach and the time invested in doing it right. In a world that often rushes, why hurry through a process when a few extra, simple steps can elevate something merely “decent” into something truly “great”? This philosophy is particularly pertinent when discussing slow cooking, an method often mistakenly associated with minimal preparation.

While it might be tempting to simply toss all ingredients into your slow cooker and press “start,” I am a staunch advocate for a crucial set of preliminary steps that make an undeniable difference in the final flavor profile. You could, of course, skip browning the pork roast, sautéing the aromatics, and deglazing the pan with stock and Chianti. The result might be edible, but it wouldn’t achieve the profound depth and richness that these initial actions impart. Browning the roast creates a beautiful crust and locks in moisture, while sautéing the onions and garlic awakens their aromatic potential. Most importantly, deglazing the pan captures all those “fond” – the beautiful, tasty brown bits stuck to the bottom of the pan – and incorporates them into your sauce, infusing every shred of pork with incredible, savory complexity. Trust me, these steps are worth every minute; they are the secret to transforming a good meal into an extraordinary one.

  • Rinse Those Capers! This is a non-negotiable step. Capers are wonderfully briny and add a fantastic piquant note to the dish, but they are packed in an incredibly salty brine. Draining and thoroughly rinsing your capers under cool water is essential to prevent your final product from becoming an overwhelming salt bomb. This ensures their bright, tangy flavor shines through without excess sodium.
  • The Chianti Connection: For this recipe, I highly recommend using a quality Chianti. It’s not merely “drinkable” – a non-negotiable criterion when cooking with wine – but truly delicious. Slow-Cooker Italian Shredded Pork

This recipe yields a generous amount of tender, flavorful pork, perfect for family dinners or entertaining. It’s a true taste of Italian comfort food, simplified for your slow cooker.

Ingredients

  • 3 to 4 pounds boneless center cut pork loin, trimmed of excess fat.
  • Salt and pepper, to taste.
  • 1 tablespoon vegetable or olive oil.
  • 2 large onions, peeled, trimmed, and diced.
  • 6 garlic cloves, peeled and minced.
  • 2 cups chicken stock or broth.
  • 1 cup Chianti red wine.
  • 1 can (14.5 ounces) or 1 1/2 cups fire roasted diced tomatoes.
  • 1 jar (8.5 ounces) julienne cut sun-dried tomatoes with herbs, packed in oil (do not drain the oil).
  • 6 strips jarred roasted red peppers.
  • 1 jar (5.75 ounces) green olives with pimientos, drained.
  • 1 jar (3.5 ounces) capers, drained and rinsed thoroughly.

Instructions

  1. Generously season the trimmed pork roast with salt and pepper on all sides. Heat the vegetable or olive oil in a heavy-bottomed frying pan over high heat. Sear the pork on all sides for several minutes until deeply browned. Using tongs, carefully transfer the browned roast to your slow cooker.
  2. Return the frying pan to the burner and reduce the heat to medium-low. Add the diced onions and minced garlic to the pan and sauté until they are fragrant and slightly softened, about 3-5 minutes.
  3. Pour in the chicken stock or broth, Chianti red wine, fire-roasted diced tomatoes, the entire jar of sun-dried tomatoes (including their herb-infused oil), roasted red peppers, drained green olives, and the thoroughly rinsed capers into the pan. Increase the heat to high.
  4. Bring the mixture to a boil, using a wooden spoon or spatula to scrape the bottom of the pan to release any beautiful, caramelized brown bits left behind by the pork. This crucial step, known as deglazing, adds immense depth of flavor to your sauce. Allow the mixture to boil for one minute.
  5. Carefully pour the hot sauce mixture over the pork in the slow cooker. Cover the slow cooker with its lid.
  6. Cook on HIGH for 4 to 5 hours, or on LOW for 6 to 8 hours, or until the pork is incredibly tender and easily shreds with a fork.
  7. Once cooked, carefully transfer the pork to a rimmed plate or shallow dish. Using two forks, shred the pork completely. Return the shredded pork to the slow cooker with the sauce and toss everything together to ensure an even distribution of the delicious sauce and ingredients.
  8. Serve hot over your favorite rice, pasta, mashed potatoes (regular or sweet), or creamy polenta. Enjoy!
