And while some might call it obsessive, I prefer to see it as a deep appreciation for the joy of eating exactly what you want.
As an ardent lover of good food, I often find myself in this delightful predicament. Living in a somewhat secluded area means I’ve had to hone my creative cooking skills and strategic pantry stocking to ensure these urgent cravings can be met without an epic road trip. This commitment to satisfying my inner foodie has led me to embrace a unique approach I like to call “Dinner Prepping.” It’s not about preparing for a global catastrophe, but rather for the profound disappointment of not being able to whip up my dream dinner on a moment’s notice. My basement might resemble a small grocery store, meticulously organized with a vast array of freezer staples and pantry essentials. Think of it as a culinary fortress, ready to defend against any sudden onslaught of hunger for a very specific meal.
This “Dinner Prepper” philosophy isn’t just a quirky habit; it’s a practical strategy born from the simple truth that life is better when your cravings are satisfied. It ensures that even when the urge for something specific strikes – like, say, the unmistakable kick of Buffalo chicken – I’m fully equipped to bring that vision to life. This preparation transforms potential frustration into a spontaneous culinary celebration, making me capable of creating restaurant-quality meals right in my own kitchen, tailored precisely to my heart’s desires. The magic truly happens when my well-stocked provisions align perfectly with an intense craving, leading to dishes that are both deeply satisfying and surprisingly straightforward to prepare.
This brings us to the star of today’s show: these incredibly satisfying Buffalo Chicken Baked Potatoes. My recent craving for wings was so intense it bordered on an obsession. But as fate would have it, a quick rummage through my freezer revealed a distinct lack of actual chicken wings. This is where the Dinner Prepper springs into action! Instead of despair, I pivoted. I had plenty of boneless, skinless chicken breasts and thighs, ready to be transformed. And most importantly, I had Frank’s RedHot and butter – the essential duo for any authentic Buffalo sauce. What else did I have in abundance? Potatoes. Glorious, versatile potatoes. In a well-stocked “Dinner Prepper’s” pantry, potatoes are non-negotiable.
Thanks to Black Gold Farms, my pantry was brimming with beautiful red potatoes, perfect for baking. Scrubbed clean, lightly rubbed with olive oil, and sprinkled with a generous pinch of kosher salt, these tubers went straight into a hot oven. While they baked to fluffy perfection, I quickly prepared the spicy Buffalo chicken topping. The timing was impeccable; both components finished cooking almost simultaneously. I carefully split open the perfectly baked potatoes, fluffed their interiors, and generously spooned the vibrant, spicy Buffalo chicken over the top. A sprinkle of crumbled blue cheese added a sharp, creamy contrast, and a dollop of cool Greek yogurt (or Ranch dressing for those less fond of blue cheese) completed this masterpiece. And just like that – dinner was served, a testament to the power of preparation and a delicious adaptation of a classic craving.


Buffalo Chicken Baked Potatoes and a Special Giveaway!

Tender, flavorful chicken coated in a quick Buffalo wing sauce, served over perfectly baked potatoes. Garnish with crumbled blue cheese and creamy Greek yogurt for a healthy, speedy, and incredibly satisfying meal!
Ingredients
For the Baked Potatoes:
- 6 medium to large size red or russet potatoes
- 1 tablespoon extra virgin olive oil
- kosher salt
For the Buffalo Chicken Topping:
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon peanut, plus extra if needed, canola, vegetable or other neutral oil
- 1/3 cup melted butter
- 1/2 cup Frank’s Red Hot
For Garnish, choose any combination of the following:
- crumbled blue cheese and Greek Yogurt or sour cream
- blue cheese dressing
- Ranch dressing
Instructions
To Bake the Potatoes:
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly and pat them dry with a towel. In a mixing bowl, drizzle them with olive oil, sprinkle with salt and pepper, then use your hands to ensure they are all evenly coated. Poke several holes in each potato with a fork to allow steam to escape during baking. Place the potatoes directly on the middle rack in the oven. Bake for 45-60 minutes, or until they are easily pierced through the center with a butter knife or skewer, indicating a soft and fluffy interior.
To Make the Buffalo Chicken Topper:
- If your chicken breasts or thighs are very thick, pound them out to about 1/2-inch thickness or cut them in half crosswise. Cut the chicken into 1/2-inch long strips, then turn the strips and cut them into 1/2-inch wide cubes. Sprinkle the kosher salt and freshly ground black pepper over the chicken on the cutting board and toss with your hands to distribute the seasoning evenly.
- In a medium-sized, heat-safe mixing bowl, stir together the melted butter and Frank’s Red Hot sauce until well combined. Set this buffalo sauce mixture aside.
- Place a heavy-bottomed saucepan or cast-iron skillet over medium-high heat. Drizzle in the neutral oil and swirl to coat the bottom of the pan. Once the oil looks shiny and is hot (a drop of water should sizzle), carefully scatter the chicken cubes in the pan. Avoid overcrowding the pan; you may need to cook the chicken in more than one batch to ensure even browning and cooking. Do not move the chicken once it hits the pan for about 4 minutes, or until it lifts easily and has developed a nice golden-brown crust on the bottom. Turn the cubes over and cook the other side for approximately 3 more minutes, or until the chicken is opaque all the way through but still wonderfully moist. Transfer the cooked chicken to the bowl containing the butter and Frank’s Red Hot mixture and toss thoroughly to coat every piece. Repeat with any remaining chicken if necessary.
To Assemble the Buffalo Chicken Baked Potatoes:
- Once the potatoes are baked, use a fork to poke a line of holes from one end of the potato to the other. Then, poke another line that crosses the center point of the first line, forming a cross pattern. Wearing oven mitts, carefully grab both ends of the potato and squeeze gently. The scored lines should open up, revealing a perfectly fluffy baked potato interior. Divide the spicy Buffalo Chicken topping evenly among the baked potatoes. Garnish generously as desired, with crumbled blue cheese and a dollop of Greek yogurt or sour cream, or with your choice of blue cheese or Ranch dressing. Serve immediately for the best experience.
