Gooey, creamy, drippy, and absolutely, unequivocally indulgent is the only way to describe the Twix Ice Cream Sandwich Cake. Ice cream sandwiches are layered with real whipped cream, hot fudge, butterscotch caramel, and crushed Twix bars, then topped with a thick layer of butterscotch caramel and more Twix bars. This no-bake wonder is perfect for summer and will satisfy any serious sweet tooth!

Ingredients

  • 2 boxes regular sized ice cream sandwiches (12 count each)
  • 1 cup hot fudge sauce (Homemade is great, but store-bought works wonderfully!)
  • 2 cups butterscotch caramel sauce (homemade is good, but a 17-ounce container of store-bought is fine, too!)
  • 1 pint heavy cream (for whipping)
  • 4 king sized Twix bars (*See Notes below, frozen for at least 30 minutes, then smashed with something heavy to break them while still in their wrappers)
  • Also helpful but not strictly necessary: heavy-duty aluminum foil

Instructions

  1. Press a sheet of heavy-duty aluminum foil into a 9×13-inch pan, leaving a 2-inch overhang on each of the long sides. This foil cradle will make it much easier to remove the frozen cake for clean slicing later. If you prefer to cut the cake directly in the pan, you can skip this step.
  2. Arrange one entire box of the regular-sized ice cream sandwiches in a single layer on the bottom of the prepared pan. You may need to cut some sandwiches to fit snugly and cover the entire base.
  3. If your hot fudge sauce is too thick, warm it gently until it’s easily spreadable. Using a silicone or offset spatula, spread the hot fudge evenly over the layer of ice cream sandwiches. Place the pan in the freezer while you prepare the whipped cream.
  4. In a separate bowl, whip the heavy cream until it forms firm peaks (refer to the Cook’s Notes for tips on achieving this). Remove the pan from the freezer and carefully spread the whipped cream evenly over the hot fudge layer.
  5. Drizzle approximately 1/2 cup of the butterscotch caramel sauce over the whipped cream (warm it slightly if necessary to make it pourable). Take two of your frozen, smashed Twix bars and scatter the crushed pieces evenly over the butterscotch caramel.
  6. Carefully arrange the second box of ice cream sandwiches over the top of the whipped cream, pressing them down gently to ensure they are well-seated.
  7. Spread the remaining butterscotch caramel sauce over the top layer of ice cream sandwiches. Then, take the other two frozen, smashed Twix bars and sprinkle their delightful pieces over the caramel.
  8. Place the entire pan back into the freezer until the cake is very firm, which will take at least 2 hours. If you plan to store the cake for longer than 2 hours before serving, cover it tightly with plastic wrap once it’s firm to prevent freezer burn.
