Sweet and Spicy Cranberry Sauce

12 ounce - the juice and zest of 1 lime

Instructions

Combine the water, orange juice, and sugar in a medium sized saucepan over high heat. Stir until the sugar is dissolved and bring the mixture to a rolling boil. Once it reaches a boil, add the fresh or frozen cranberries and allow the mixture to return to a boil. Reduce the heat to low and let it simmer gently until almost all of the berries have burst and the sauce has noticeably thickened. Be sure to stir frequently to prevent any scorching at the bottom of the pan. Remove the pan from the heat and immediately stir in the lime juice, lime zest, minced jalapeno pepper, fresh cilantro, sweet onion, and sea salt until all ingredients are evenly distributed throughout the sauce. Transfer the finished sauce into a bowl and cover tightly with plastic wrap, or place it in an airtight container. Refrigerate until thoroughly chilled and ready to serve. The sauce will continue to thicken beautifully as it cools in the refrigerator.
