However, if loose leaf isn’t readily available, 10 good-quality chai tea bags can be an excellent substitute. Just ensure they are strongly flavored to impart that signature chai warmth.
The Vanilla Factor: Bean or Extract?
- I personally prefer to use half of a whole vanilla bean, split lengthwise with the seeds scraped out, to infuse the milk and cream mixture. The vanilla bean adds an unparalleled depth of flavor and an elegant visual appeal with the tiny flecks of vanilla. If vanilla beans are difficult to find or outside your budget, a teaspoon of pure vanilla extract is a perfectly acceptable alternative. Just make sure it’s pure extract for the best flavor.

- Tempering the egg yolks is vital to prevent them from scrambling when mixed with the hot milk and cream. This process gradually brings the temperature of the egg yolks up. Start by slowly whisking a small amount (about half a cup) of the hot dairy mixture into the beaten egg yolks. This gently warms them. Once that’s fully incorporated, you can confidently add the remaining hot milk and cream, whisking continuously but not vigorously. This technique ensures a smooth, silky custard base.

The water bath creates a moist, consistent heat environment around the ramekins, preventing the custard from cooking too quickly, curdling, or cracking. It’s a simple step that yields professional results, ensuring your custard is beautifully set on the edges while retaining a delicate wobble in the center.
The Grand Finale: The Burnt-Sugar Caramel Layer
- The signature crack of crème brûlée comes from perfectly caramelized sugar. Ensure your custard is thoroughly chilled before attempting this step. Work with one ramekin at a time, sprinkling an even layer of organic or raw sugar over the cold custard. Using a culinary blowtorch, sweep the flame evenly over the sugar. Watch closely as it melts, bubbles, and transforms into a deep mahogany brown. Don’t be afraid to let a few spots get a little darker, almost blackened, for that intense, bittersweet caramel flavor. Allow the caramel to harden for at least one minute before serving to achieve that satisfying crack.

Ingredients
For the Chai Custard:
- ¾ cup Horizon Organic Whole Milk
- ¾ cup Horizon Organic Whipping Cream
- ½ a vanilla bean split in half lengthwise, seeds scraped
- 3 heaping tablespoons loose leaf chai tea or 10 chai tea bags
- ¼ cup organic or raw sugar
- 5 large Horizon Organic egg yolks
- 1 pinch kosher salt
For the Burnt-Sugar Caramel Layer:
- 2 teaspoons organic or raw sugar per ramekin
Instructions
To Make the Chai Custard:
- Preheat your oven to 325°F (160°C). Place a large kettle of water on the stove to boil for the water bath.
- In a 2-quart heavy-bottomed saucepan, combine the whole milk, whipping cream, the split vanilla bean along with its scraped seeds, and the chai tea (loose leaf or bags). Place the saucepan over medium heat and bring the mixture just to a boil, stirring frequently to prevent scorching on the bottom. As soon as it reaches a boil, remove the pan from the heat and cover it tightly. Allow the chai mixture to steep for 10 minutes to fully infuse the flavors.
- After steeping, pour the mixture through a fine-mesh sieve to remove the tea leaves (or bags) and the vanilla bean. Discard the solids. Wipe any sediment from the saucepan and return the now-infused cream mixture to the clean pan. Place it over very low heat to keep it warm while you prepare the egg yolks.
- In a stand mixer fitted with a whisk attachment, or using a hand mixer on high speed, beat the egg yolks, organic sugar, and kosher salt together. Continue beating until the mixture thickens and becomes visibly lighter in color, indicating it’s well aerated.
- With the mixer on low speed, carefully and slowly whisk in a small amount – approximately half a cup – of the hot milk and cream mixture into the egg yolk mixture. This step is crucial for tempering the eggs, preventing them from scrambling. Once fully incorporated, gradually add the remaining milk and cream mixture, whisking thoroughly but gently. Avoid whisking too vigorously, which can introduce too much air.
- Divide the custard mixture evenly among your ramekins or small jelly jars.
- Place the filled ramekins into a roasting pan or a sided baking pan that is just large enough to hold them all comfortably. Carefully transfer the pan to the center rack of your preheated oven. Now, meticulously pour the hot water from your kettle into the roasting pan, ensuring the water level reaches about halfway up the sides of the custard dishes. Be very careful not to splash any water into the custards themselves. Loosely tent the entire pan with aluminum foil.
- Bake for approximately 45 minutes, or until the custard appears set around the outside edges but still retains a slight, delicate wobble in the very center when gently nudged.
- Carefully remove the custard cups from the water-filled pan and transfer them to a cooling rack. Once cooled to room temperature, cover each ramekin tightly and chill them in the refrigerator for at least 6 hours prior to serving. For optimal flavor and texture, chilling overnight or even up to a couple of days in advance is highly recommended.
To add the burnt-sugar caramel crisp layer:
- Working with one ramekin at a time, sprinkle 2 teaspoons of organic or raw sugar evenly over the surface of the chilled custard. Gently rotate the ramekin to ensure the sugar is distributed in a uniform layer.
- Using a kitchen culinary torch, begin to melt the sugar. Sweep the flame evenly over the surface of the sugar, watching as it melts, bubbles, and transforms into a beautiful, deep mahogany brown caramel. Aim for an even color across the top, and don’t hesitate to allow a couple of spots to darken slightly, even bordering on blackened, for a more complex, bittersweet flavor profile.
- Allow the caramelized sugar layer to harden for at least 1 minute before serving. The satisfying “crack” when you tap your spoon against it is a key part of the crème brûlée experience!
