Ingredients
For the Potatoes:
- Desired number of large Russet potatoes *See Notes for guidance, scrubbed thoroughly under running water and air dried.
- Olive oil
- Coarse salt (either sea salt or kosher salt works perfectly)

- Fully cooked chorizo, shredded pork, chicken, or beef
