These icy treats are meticulously designed to cool you down and elevate any warm-weather gathering.

The discovery of boozy popsicles, particularly those inspired by the classic Pimm’s Cup, was a revelation. For many outside of the UK, the mention of “Pimm’s Cup” might draw a blank stare. Fear not! This guide will not only introduce you to the enchanting world of Pimm’s but also walk you through creating the most invigorating frozen rendition of this beloved British cocktail. Before we dive into the specifics of Pimm’s No. 1 and its transformation into an ice-cold delight, let’s explore the magic of frozen alcoholic treats and why they’re the perfect antidote to a scorching day.
The Allure of Boozy Popsicles: Adult Frozen Delights
Imagine your favorite cocktail, but instead of a glass, it’s a perfectly frozen, hand-held delight that slowly melts on your tongue, releasing bursts of flavor. That’s the essence of boozy popsicles. These adult-only frozen treats offer a novel and exceptionally refreshing way to enjoy classic cocktails, transforming liquid refreshment into a cool, invigorating experience. On a sweltering summer day, a conventional cocktail with ice can only do so much; a frozen cocktail popsicle, however, provides an unparalleled internal cool-down, making every sip—or lick—a moment of pure bliss.

Choosing the Right Tools for Your Boozy Pops
When venturing into the world of boozy popsicles, the choice of mold is crucial. Traditional, rigid popsicle molds often pose a challenge due to the alcohol content in the mixture. Alcohol lowers the freezing point of liquids, preventing the popsicles from freezing completely solid. This can lead to frustration when trying to extract your frozen creation from a standard mold, often resulting in a broken or messy pop.
This is precisely why I wholeheartedly recommend using disposable zip-top freezer pop bags or reusable freezer pop tubes. These flexible options are available on Amazon and are ideal for alcoholic popsicles. Their design ensures that even if your Pimm’s Cup mixture doesn’t freeze rock-hard, the flexible packaging keeps the treat intact, allowing for easy consumption without the worry of breakage. Simply snip the top of a bag or push the pop up from the tube, and enjoy your perfectly chilled, boozy delight.
Pimm’s Cup: The Quintessential British Summer Cocktail
So, what exactly is a Pimm’s Cup? In its most classic form, it’s a refreshing British cocktail centered around Pimm’s No. 1 Liqueur, mixed with fizzy lemonade, and generously garnished with an array of fresh fruit and herbs—think strawberries, cucumber slices, orange, and mint. It’s a drink synonymous with long, sunny afternoons, garden parties, and prestigious sporting events.

The Story Behind Pimm’s No. 1 Liqueur
Pimm’s No. 1 is more than just a spirit; it’s a piece of British heritage. Dating back to the 1840s, it was first created by James Pimm, a oyster bar owner in London, who offered it as a digestif. This gin-based liqueur is infused with a secret blend of herbs, spices, and fruit extracts, giving it a distinctive, complex, and incredibly refreshing flavor profile. Its relatively low alcohol content makes it an ideal base for light and enjoyable summer drinks, designed for leisurely enjoyment rather than intense potency.
Pimm’s Cup: A Symbol of British Summer
Over the centuries, the Pimm’s Cup cocktail gained immense popularity, becoming an unofficial drink of iconic British summer events. It’s practically mandatory at Wimbledon, a staple at the Chelsea Flower Show, and a welcome sight at countless picnics and cricket matches. Its appeal lies in its crisp, clean taste and its ability to be both thirst-quenching and subtly celebratory. The vibrant garnishes – a veritable “garden in a glass” – add to its charm, making it as visually appealing as it is delicious.
Introducing the Pimm’s Cup Royale Boozy Popsicle
While the classic Pimm’s Cup is a low-alcohol affair, our boozy popsicle version, which we affectionately call the Pimm’s Cup Royale, takes the refreshment factor to an exhilarating new level. The key modification? We substitute the traditional fizzy lemonade with crisp, bubbly Prosecco. This elevates the drink, adding a sophisticated sparkle and a slightly higher alcohol content that perfectly complements the gin-based liqueur and fresh fruit.
In this frozen adaptation, we streamline the garnish. While a fresh slice of cucumber or a sprig of mint is lovely in a glass, chomping on a frozen chunk of vegetable in a popsicle isn’t quite the same experience. However, for those who love the tradition, serving these popsicles alongside chilled cucumber slices, fresh berries, and maybe even a few basil leaves on the side can still capture the essence of the classic presentation. The combination of sweet strawberries, tangy lemon, and the unique botanical notes of Pimm’s, all enhanced by the lively fizz of Prosecco, creates a truly unforgettable frozen treat.
Essential Tips for Crafting Perfect Boozy Popsicles
Making boozy popsicles is a fun and rewarding process, but a few pointers can ensure your success:
- Embrace Flexibility: As mentioned, flexible molds or bags are your best friends. They accommodate the softer texture of alcoholic popsicles, preventing frustration and ensuring every pop is easily enjoyed.
- Mind the Alcohol Content: Remember that the more alcohol you add, the softer your popsicles will be. For optimal freezing and texture, aim for recipes where alcohol constitutes no more than 20-25% of the total liquid volume. Our Pimm’s Cup Royale recipe strikes an excellent balance.
- Taste Test Before Freezing: Always taste your mixture before freezing. Flavors can become muted when cold, so you might want to make the mixture slightly sweeter or more intense than you would for a liquid cocktail.
- Allow Ample Freezing Time: While some popsicles might set in 4-6 hours, boozy versions often benefit from freezing overnight to reach their ideal consistency.
- Storage: Store your completed boozy popsicles in an airtight container or keep them sealed in their individual bags/tubes in the freezer for up to three months. Beyond that, the flavors might start to diminish.

Pimm’s Cup Royale Boozy Popsicles
Recipe by Rebecca Lindamood
Equipment
-
Reusable or disposable freeze pop tubes/bags
-
Funnel (for easy filling)
Ingredients
- 4 strawberries (hulls removed and sliced)
- 1 pinch sugar
- 4 ounces Pimm’s No. 1 Liqueur
- ½ lemon, juiced
- 8 ounces Prosecco
Instructions
-
In a bowl, combine the sliced strawberries and the pinch of sugar. Mash them thoroughly using a fork or potato masher until the strawberries are fully liquified and form a puree. Transfer this strawberry puree to a liquid measuring cup. Add the Pimm’s No. 1 Liqueur and the fresh lemon juice to the same measuring cup and stir to combine.
-
Carefully divide the Pimm’s and strawberry mixture evenly among 4 freezer pop tubes or bags. Using a funnel can help prevent spills. Next, slowly and carefully top off each bag or tube with the Prosecco. You may find it easier to add the Prosecco in smaller installments, allowing the bubbles to subside slightly before adding more, to ensure you can fit all of the bubbly liquid.
-
Once filled, securely zip the freezer pop bags closed or fix the lid firmly in place on the tubes. Place them in the freezer and freeze for a minimum of 4 hours, or ideally, overnight, to achieve the best consistency. These boozy popsicles are best enjoyed within 3 months of being made.
