Yorkshire Sausage Bake

Toad in the Hole: A Classic English Comfort Food Masterpiece

There are few dishes that capture the essence of home-style comfort quite like Toad in the Hole. This beloved English classic, featuring succulent sausages baked into a golden, puffed Yorkshire pudding batter, is a culinary marvel that deserves a place on every table. While its popularity in the United States may not yet rival its British fame, I believe it’s a dish poised for widespread adoration once experienced. It’s the ultimate warm embrace on a plate, offering a satisfying combination of savory flavors and delightful textures.

My rendition of Toad in the Hole elevates this traditional fare to new heights. Imagine a wonderfully savory, richly flavored, thyme-infused puff pancake with irresistibly crisp edges, perfectly cooked alongside deeply roasted sausages. Their delicious drippings meld with the batter, creating an unparalleled depth of flavor. Served with a generous spoonful of homemade, luscious onion gravy, this dish transcends mere sustenance to become a truly comforting and substantial meal that will vanish from your table faster than you can say “more, please!”

The Undeniable Charm of Toad in the Hole

If you’re familiar with the delightful experience of a Dutch Baby, a German pancake, or even a Finnish Pannukakku, then the concept of Toad in the Hole will feel like a welcome friend. This dish is essentially the savory sibling to those sweet, puffy oven-baked pancakes, and it is utterly irresistible. The magic happens in the oven, as a simple batter transforms into a dramatically risen, airy, and golden casing for the sausages, creating a stunning presentation and an even more satisfying taste. It’s a testament to the simple yet profound joy that traditional British cuisine can bring.

The origins of Toad in the Hole trace back to the 18th century, a time when frugal cooks sought clever ways to stretch expensive meat. By encasing sausages (or sometimes other meats) in a batter, they created a filling and economical meal. Over time, it evolved into the beloved dish we know today, often served as a hearty dinner or a weekend brunch centerpiece. Its charmingly quirky name is thought to refer to the way the sausages peek out of the batter, much like toads peeking from a hole – a whimsical name for a genuinely delicious dish!

Choosing Your Sausages: The Heart of the Dish

While classic British versions of Toad in the Hole often feature larger, more robust English banger sausages, my family has developed a particular fondness for using American-style breakfast sausages. For this recipe, I enthusiastically recommend Johnsonville Breakfast Sausages. Their convenient availability in most grocery stores makes them an easy choice, but it’s their quality and perfect size that truly set them apart for this dish. Johnsonville Original Breakfast Sausages achieve that ideal “roasty-toasty,” mahogany exterior when baked, while remaining tender and juicy throughout the cooking process. Their smaller stature allows them to be beautifully enveloped by the Yorkshire pudding-like batter, ensuring every bite delivers a harmonious blend of sausage and crispy, fluffy pancake. The slight sweetness and spice of the original blend complement the savory batter and rich gravy exquisitely, making it a truly balanced and delectable meal.

Expert Tips for a Flawless Toad in the Hole

Achieving the perfect Toad in the Hole is simpler than you might think, especially with a few seasoned cook’s notes. These pointers will help you master this comforting dish, ensuring crisp edges, a lofty puff, and exceptional flavor every time.

  1. Mustard Matters: Enhancing the Batter’s Flavor

A good quality English mustard in the batter is a game-changer, adding a subtle tang and depth that beautifully complements the sausages. I personally prefer to use a prepared English mustard like Colman’s. Its robust flavor is distinctive and authentic. If you opt for Colman’s English mustard powder, remember to reduce the amount to 1/2 teaspoon for a balanced taste, as powders are more concentrated. Should Colman’s be unavailable, don’t fret! An equal amount of a strong Dijon mustard or a spicy brown mustard will work wonderfully, providing a similar piquant kick. Alternatively, 1/2 teaspoon of any other mustard powder can be used in its place. The goal is a gentle warmth that elevates the overall profile of the dish without overpowering it.

  2. Sausage Selection: Johnsonville Originals Shine

As mentioned, the choice of sausage significantly impacts the final flavor. While Johnsonville offers a delicious maple-flavored breakfast sausage, I find that the savory notes and classic seasoning of the Johnsonville Original Breakfast Sausages harmonize best with the traditional profile of Toad in the Hole. Their balanced seasoning and ideal size contribute to the perfect balance of flavors and textures within the dish. This recipe was developed specifically with Johnsonville’s quality in mind, ensuring a consistently delicious outcome.

  3. The Right Pan: Cast Iron for Crispy Perfection

There’s something truly magical about baking Toad in the Hole in a cast-iron skillet. The skillet’s superior heat retention and distribution are key to achieving those coveted crispy edges and a beautifully browned, robust crust on the puff pancake. If you don’t own a cast-iron skillet, fear not! A traditional cake pan or any sturdy baking dish will certainly get the job done. While the edges might be slightly less crisp, the dish will still be incredibly flavorful and satisfying. Just ensure your chosen pan is oven-safe and can withstand the initial high heat required for the batter to properly puff.

  4. Scaling Up for a Crowd: Easy Doubling

Planning a brunch gathering or feeding a larger family? This recipe is wonderfully scalable! It doubles beautifully and fits perfectly into a standard 9-inch by 13-inch baking dish. Just ensure your oven is adequately preheated and allow a few extra minutes for baking, as larger quantities may take slightly longer to set and brown evenly. This makes Toad in the Hole an excellent option for entertaining, as much of the preparation is hands-off once it hits the oven.

  5. The Essential Accompaniment: Savory Onion Gravy

While some might consider it optional, I firmly believe that a rich, flavorful onion gravy is a non-negotiable accompaniment to Toad in the Hole. It’s a traditional pairing for a reason, adding an incredible layer of moisture, savory depth, and luxurious texture that truly completes the dish. The recipe for this delectable gravy is included, ensuring you have the full, authentic experience. Don’t skip it – it transforms a great dish into an extraordinary one!

Ingredients

For the Toad in the Hole:

  • 2 tablespoons sunflower or vegetable oil
  • 12 ounces fresh Johnsonville Original Breakfast Sausages (one package)
  • 1 1/4 cups whole milk
  • 1 large egg
  • 1 teaspoon prepared Colman’s English Mustard
  • 1/2 cup all-purpose flour or 2 1/8 ounces by weight
  • 1/2 teaspoon kosher salt
  • 3 sprigs fresh thyme, leaves only or 1/2 teaspoon dried whole thyme leaves

For the Onion Gravy:

  • 1/4 cup unsalted butter (4 tablespoons)
  • 2 onions, peeled, halved, and sliced thinly
  • 1 teaspoon light brown sugar
  • 1 teaspoon browning sauce optional
  • 1/4 cup all-purpose flour
  • 2 cups beef or vegetable broth or stock

Instructions

To Make the Toad in the Hole:

  • Preheat oven to 400°F (200°C).

Drizzle the oil evenly over the bottom of a 10-inch cast-iron skillet or an 8-inch by 8-inch square baking dish. Arrange the Johnsonville sausages in the pan, rolling them briefly in the oil to coat. Place the pan in the preheated oven and roast for 10 minutes while you prepare the batter. This initial roasting step is crucial for developing flavor and creating those beautiful, browned sausages.

In the work carafe of a blender, combine the whole milk, large egg, prepared English mustard, all-purpose flour, and kosher salt. Secure the lid and blend on low speed until the mixture is completely smooth and free of any lumps. Stir in the fresh thyme leaves (or dried thyme, if using). Allowing the batter to rest for 10-15 minutes at room temperature while the sausages roast can help achieve a better puff.

Once the sausages have roasted for 10 minutes, carefully remove the hot pan from the oven. Immediately and gently pour the prepared batter in and around the sausages. Return the pan to the oven and bake for approximately 40 to 50 minutes. The Toad in the Hole is ready when the edges are wonderfully crisp, the batter is fully set and dramatically puffed, and the top boasts a deep golden brown hue, with the sausages appearing a rich mahogany. To check for doneness, you can insert the tip of a sharp knife into the center; it should come out clean, without any wet batter sticking to it.

Allow the Toad in the Hole to cool for 3 to 5 minutes before slicing it into generous wedges. This brief resting period helps the structure set and makes for easier serving.

To Make the Onion Gravy:

  • In a heavy-bottomed saucepan, melt the unsalted butter over low heat. Add the thinly sliced onions along with the kosher salt. Cook the onions slowly for about 20 minutes, stirring frequently, until they become beautifully softened and caramelized to a golden brown. This slow cooking develops a deep, sweet flavor in the onions. Sprinkle the light brown sugar over the onions and continue to cook for another 5 minutes, allowing the sugar to melt and further caramelize the onions.

Sprinkle the all-purpose flour over the caramelized onions and stir continuously until the flour fully coats the onions and no dry lumps remain. Cook for a minute or two, stirring, until you notice a slightly nutty aroma – this indicates the flour has cooked out its raw taste. Whisk in the browning sauce (if using) to deepen the color and savory notes, then slowly drizzle in the beef or vegetable broth or stock, whisking constantly to ensure a smooth, lump-free gravy. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook for 4 to 5 minutes, or until the gravy has thickened to your desired consistency and is smooth and glossy.

Serve this rich, savory onion gravy generously spooned over hot wedges of Toad in the Hole. It’s the perfect complement to the crisp batter and juicy sausages.
