Tequila Lime Pork Tenderloin: Your New Favorite Grilling Recipe
If you’ve been following along, it’s probably no secret that pork holds a cherished spot in our family’s meal rotation, often making an appearance three to five times a week. Beyond its incredible versatility, pork stands out as one of the most budget-friendly protein options for feeding a bustling family like ours. Its mild, adaptable flavor makes it an ideal canvas for an endless array of culinary creations. Whether you’re craving an aromatic Asian stir-fry, a rich French stew, or a vibrant Mexican fiesta, pork effortlessly shines in virtually every global cuisine, offering a diverse spectrum of dining experiences night after night.
The beauty of pork also lies in the sheer variety of cuts available, each lending itself to distinct cooking methods and flavor profiles. From succulent tenderloins perfect for a quick grill to hearty roasts ideal for slow braising, pork truly transcends seasonal boundaries. It’s a fantastic choice for a comforting winter dish, a light and fresh summer meal, a robust autumn centerpiece, or a lively spring grill-out. Today, as spring finally graces us with its presence (fingers crossed we dodge any unexpected snowstorms!), we’re embracing the outdoors and firing up the grill for a truly exceptional Tequila Lime Pork Tenderloin.
Mastering the Marinade: Tequila Lime Pork Tenderloin
My love for tequila lime chicken inspired me to apply that same bright, zesty marinade concept to the wonderfully mild and tender pork tenderloin. The result? A dish that’s incredibly easy to prepare yet delivers an impressive burst of flavor. There’s absolutely nothing intimidating about the process, making it perfect for both novice cooks and seasoned grill masters. To create this vibrant marinade, simply combine tequila, fresh lime juice, a touch of honey for sweetness, pungent minced garlic, a hint of onion powder, finely minced jalapeño for a gentle kick, and fresh cilantro in a large resealable bag. Give it a good squish to combine, then add your pork tenderloins. Squeeze out as much air as possible before sealing the bag and tucking it into the refrigerator. Marinate for at least one hour, or ideally, overnight, to allow the flavors to fully penetrate the meat.
Once marinated, preheat your grill to a medium temperature. Remove the tenderloins from the bag, letting any excess marinade drip off, and place them directly on the hot grates. Grill for approximately 20 to 27 minutes, turning occasionally to ensure even cooking and beautiful grill marks. The key to perfectly cooked pork tenderloin is knowing when to take it off the heat. Aim for an internal temperature of 145°F (63°C), measured with a reliable meat thermometer. This temperature might surprise you, but trust me, it’s a game-changer.

The Truth About Pork: Why 145°F is the New Standard for Juiciness
“Wait, 145°F?” you might exclaim, and you wouldn’t be alone in your surprise. For years, many of us were taught to cook pork until it was well-done, often resulting in dry, tough meat resembling shoe leather. But here’s the exciting news: those days are long gone! The USDA (U.S. Department of Agriculture) updated its guidelines, recommending a safe internal cooking temperature of 145°F for whole cuts of pork, followed by a three-minute rest. This is a significant fifteen-degree drop from previous recommendations.
Extensive testing has unequivocally proven that pork cooked to 145°F is not only microbiologically safe but also incredibly tender, juicy, and packed with flavor. This advancement reflects improved animal husbandry practices and a deeper understanding of food safety. Embracing this new standard means you no longer have to sacrifice the succulent texture and natural moisture of pork to ensure it’s safe to eat. This culinary progress allows us to truly appreciate the inherent quality of modern pork, transforming meals from merely adequate to truly extraordinary. Prepare yourself for a tenderloin that melts in your mouth with every bite.

Cook’s Notes for Tequila Lime Pork Tenderloin Success
- Invest in a Meat Thermometer: Seriously, this is your secret weapon. If you’re new to cooking pork to the updated safe temperature of 145°F, an inexpensive instant-read thermometer will be your best friend. It eliminates all guesswork, ensuring your pork is perfectly cooked every time. Once the tenderloin hits 145°F, remove it from the grill, gently tent it with foil, and let it rest for a crucial 3 minutes before slicing. This resting period allows the juices to redistribute, resulting in an even more tender and flavorful outcome.
- Cilantro Conundrum: I understand that cilantro can be a divisive herb, with some folks having a genetic predisposition that makes it taste like soap. If you are absolutely, unequivocally opposed to cilantro, I genuinely apologize! In that case, feel free to substitute it with an equal amount of finely chopped fresh parsley. However, if your feelings about cilantro are merely “meh,” I encourage you to keep it in this recipe; its bright, fresh notes truly complement the tequila and lime.
- Serving Suggestions: This Tequila Lime Pork Tenderloin is wonderfully versatile. I adore serving it alongside a fluffy bed of rice and a refreshing side like this Sweet Corn and Black Bean Salsa or a vibrant Grilled Mexican Street Corn Salad. For those feeling particularly indulgent, it also pairs beautifully with a rich and creamy Spicy Slow-Cooker Bacon Corn Dip. The bright flavors of the pork cut through the richness of the dip, creating a harmonious feast.
- Leftover Brilliance: Don’t let any leftover Tequila Lime Pork Tenderloin go to waste! It’s absolutely marvelous sliced thinly and added to a fresh taco salad for a quick lunch, or piled high on your favorite bread for a gourmet sandwich. The flavors deepen overnight, making it just as delicious, if not more so, the next day.

Ingredients
- Juice of 4 limes
- 1/4 cup tequila
- 1/4 cup olive oil
- 1 fistful finely chopped cilantro (about 1/4 cup)
- 1 fresh jalapeño, stemmed, seeded, and finely minced
- 3 tablespoons honey
- 2 teaspoons minced garlic
- 2 teaspoons kosher salt
- 3/4 teaspoon onion powder
- 2 pork tenderloins (about 2 1/2 pounds total)
Instructions
- Add all ingredients except the pork tenderloins to a resealable gallon-sized bag. Seal the bag, then squish the ingredients until evenly combined into a marinade. Open the bag, add the pork tenderloins, squeeze out as much air as possible, and reseal it securely. Use your hands to gently massage the bag, ensuring the marinade is evenly distributed around the pork. Refrigerate and marinate for a minimum of 1 hour, or for best results, overnight.
- Preheat your clean grill to medium heat. Using tongs, remove the tenderloins from the marinade and place them directly on the preheated grill grates. Turn the tenderloins occasionally to ensure even cooking and develop a beautiful crust on all sides. Grill for approximately 20-27 minutes, or until the internal temperature reaches 145°F (63°C) when measured with an instant-read meat thermometer inserted into the thickest part of the meat.
- Once cooked, transfer the tenderloins to a rimmed platter. Lightly tent the platter with aluminum foil and allow the pork to rest for 3 minutes before slicing. This crucial resting period helps the juices redistribute throughout the meat, resulting in maximum tenderness and flavor. Slice against the grain and serve immediately.
