
Welcome, fellow dessert enthusiasts, to what I can confidently call one of the most irresistible creations to emerge from my kitchen. Among all the delightful recipes developed for the Captain Morgan’s “Spice Up the Holidays” campaign, this particular treat vanished with astonishing speed. Perhaps it’s the magical allure of anything deep-fried, or maybe it’s the unique combination of flavors, but these churros were an undisputed crowd-pleaser.
I am thrilled to finally introduce my masterpiece for the contest: Banana Churros with a luxurious Butter Rum Caramel Dipping Sauce. The inspiration struck during a brainstorming session with my brilliant younger sister, Christina, a true culinary visionary. Her simple text – “Churros” – instantly lit up my creative mind. From there, the idea evolved, transforming traditional churros into something extraordinary. We decided to infuse them with the subtle sweetness of banana and replace the typical chocolate dip with a truly festive and decadent Butter Rum Caramel. The result? A dessert that elicits a resounding “Amen!” from everyone who tastes it.
Just behold these golden delights, gracing the party table with their undeniable charm and inviting aroma. They’re not just a dessert; they’re a statement.
When I first embarked on this culinary competition, I honestly didn’t consider myself a fount of entertainment wisdom. However, as I delved deeper, I realized I possess a unique philosophy for hosting – one that might not always align with traditional etiquette guides but certainly brings joy and ease to my gatherings. My approach is all about authenticity, good food, and great company, creating an atmosphere where everyone feels relaxed and cherished.

Essential Entertaining Tips from a Foodie Host
My philosophy for successful entertaining revolves around creating memorable experiences without unnecessary stress. Here are some of my go-to tips for throwing a fantastic party that keeps everyone happy, fed, and engaged:
- Embrace the Appetizer Extravaganza: A Full Meal Isn’t Always Necessary. Forget the pressure of a multi-course dinner. A beautifully curated spread of appetizers and a selection of delightful beverages can keep your guests perfectly satisfied and encourage more mingling. Finger foods promote movement and conversation, making it easier for guests to interact freely rather than being confined to a seated arrangement. This approach offers significant bonuses: most appetizers can be prepared in advance, freeing you up to enjoy your own party, and there’s no need for a complex seating plan. Trust me, I didn’t even assign tables at my wedding – I believe in consistency when it comes to relaxed hosting!
- Leverage the Unique Talents of Your Guests. Think beyond just asking guests to bring a dish. Do you have friends who are exceptionally talented musicians? Encourage them to bring their instruments and provide live entertainment, either in addition to or in lieu of a potluck contribution. Know someone who bakes the most incredible pastries? Ask them to bring their signature dessert to share. Or perhaps you’re lucky enough to have a friend who brews killer homemade beer? (You lucky dog!) Invite them to bring a few bottles to sample with everyone. Utilizing these unique talents adds a personal, memorable touch to your gathering and makes guests feel genuinely appreciated for their specific skills.
- Stay True to Yourself: Authenticity is Key. Your friends love you for who you are, not for who you pretend to be. While it’s fun to challenge yourself with new recipes or decor ideas, ensure your party reflects your genuine style and preferences. If you’re a nature lover, grab some fragrant pine boughs from the woods for natural decorations. Repurpose items you already own in creative ways – like using a decorative cheese box top as a riser for appetizers (as seen in some of my party photos). If you’re typically a super casual person, embrace a laid-back vibe for your party. If you’re a heels-and-pearls kind of gal, then go all out formal! The most successful parties are those where the host is comfortable and authentic, and that comfort radiates to your guests.
- Candles: The Ultimate Ambiance Creator. This tip might be optional if you’re hosting, say, a Jedi fancy-dress party where pretend light sabers are being swung, but otherwise, I implore you: use as many candles as practically possible! Why? Because they instantly transform any space, adding warmth, a soft glow, and an undeniable sense of magic. Candles create an intimate and inviting atmosphere that makes everyone feel at ease and adds a touch of sophistication, even to the most casual gathering. The flickering light encourages relaxation and conversation, making them an essential tool for any host.
- Always Serve Cheese and Nuts. This might not sound groundbreaking, but it’s a brilliant strategy. There’s an excellent chance that even if someone finds everything else on the table not to their liking, they will still appreciate a selection of cheese and nuts (barring a vegan with a nut allergy, of course). Both are substantial, satisfying foods that can help fill gaps and provide a reliable snack. They offer a simple elegance and are incredibly versatile, pairing well with a wide range of beverages and other appetizers.
- Splurge on Quality Cheese. If you’re going to dip into your “rainy day fund” for a party, make your biggest splash on a variety of high-quality cheeses. You don’t need a huge selection – two or three excellent cheeses are plenty – but opt for good ones. The difference in flavor and texture is profound, and your guests will notice. If you’re unsure what to pick, don’t hesitate to ask someone at the cheese counter for recommendations for an after-dinner cheese plate or a general party spread. They can guide you toward unique flavors and textures that will elevate your entire appetizer presentation.
Our recent weeknight “just-because-we-could” party was an absolute riot. I added an element of mystery by not telling anyone what was really going on. You have to adore a group of friends who show up when you text them and ask them to come “dressed festively from the waist up.” My friend Sharon perfectly captured the intrigue, saying, “This text was so mysterious. How could I not come?”
The delicious cocktails and tempting nibbles provided a welcome, vibrant respite in the middle of a busy workweek, proving that any day is a good day for a spontaneous celebration.


I believe Gena was delightfully surprised by the refreshing Dark & Stormy Orchard cocktail, a perfect blend of sweet and spicy notes.

Bob was clearly eyeing some of the tempting goodies on display. Was he reaching for the savory Jerk Chicken Bites with Rum-Glazed Grilled Pineapple, a fantastic balance of sweet and spicy flavors?

…Or perhaps the aromatic Rosemary Garlic Almonds? Or maybe he just couldn’t resist the allure of the cheese platter?


The feedback on the churros was unanimous and overwhelmingly positive. Staci and Sharon raved about them. My “Evil Genius” partner and I adored them. Bob and Gena couldn’t get enough. In short, the Banana Churros with Butter Rum Caramel dipping sauce reigned supreme at the party. Everyone seemed genuinely surprised by how incredibly light and crispy they were, a testament to their unique preparation. Bob even declared them superior to Krispy Kreme, stating, “These are four times as light and crispy as Krispy Kreme.” That, my friends, is a compliment I will proudly accept!

Our mellow, spontaneous weeknight gathering was truly spiced up, thanks to the fantastic Captain Morgan-inspired menu, from the delectable churros and savory bites to the refreshing Dark & Stormy Orchards. It was a perfect blend of unexpected fun and delicious flavors.

Banana Churros with Butter Rum Caramel

Light-as-a-feather and deep-fried don’t usually describe the same food, but that’s exactly what these mildly banana-flavored churros are. Crisp on the outside, airy and moist on the inside, these Banana Churros with a creamy, rich, rummy butter caramel dipping sauce are a surefire hit wherever and whenever they’re served. They offer a unique twist on a classic treat, perfect for any festive gathering or a special weeknight dessert.

Ingredients
For Butter Rum Caramel:
- 3/4 cup granulated sugar
- 1/4 cup warm water
- 1 cup heavy cream
- 3 tablespoons Captain Morgan’s Original Spiced Rum
- 1 tablespoon cold butter, cut into small pieces
For the Banana Churros:
- 1 very ripe banana
- Fresh water
- 4 tablespoons unsalted butter
- 1 cup all-purpose flour (4 1/4 ounces by weight!)
- 1/4 teaspoon kosher salt
- 3 large eggs, room temperature
- Enough peanut or canola oil (or lard) to fill a heavy-bottomed, high-sided frying pan or pot with at least 1-inch of oil
- Cinnamon sugar for sprinkling finished Banana Churros
Instructions
To Make the Butter Rum Caramel:
- Add the sugar and water to a heavy-bottomed saucepan. Swirl gently to help the sugar dissolve. Place over a high flame or high heat and bring to a rolling boil. It is crucial NOT to stir this mixture. Only swirl the pan occasionally to prevent crystallization. Continue cooking until the sugar syrup reaches a deep orange-brown color, indicating a rich caramel.
- Carefully remove the pan from the heat and immediately add the heavy cream all at once. Be extremely cautious, as the mixture will splatter and spit quite a bit due to the temperature difference.
- At this stage, you might be concerned that you’ve made a mistake, as the beautifully formed caramel will seize up into a hard lump in the middle of the cream. Don’t worry, this is normal! It will resolve.
- Return the pan to the burner and reduce the heat to medium. NOW you can stir! Stir frequently with a whisk or spoon to help melt the hardened caramel back into the cream. The mixture will bubble gently, which is perfectly fine. After about 5 minutes of stirring, the caramel should be fully melted and incorporated into the cream, creating a smooth sauce.
- Remove the pan from the heat. Stir in the Captain Morgan’s Original Spiced Rum and the cold butter pieces until the butter is fully melted and smoothly incorporated into the caramel sauce.
- Cover the pan and let the butter rum caramel cool while you prepare the Banana Churros. This cooling time allows the flavors to meld beautifully and the sauce to thicken slightly.
To Prepare the Banana Churros:
- Peel and thoroughly mash the very ripe banana until it is completely smooth and free of lumps. Scrape the mashed banana into a 2-cup liquid measuring cup. Fill the measuring cup with fresh water up to the 1 1/4 cup line, then stir to combine the banana and water. Pour this mixture into a heavy-bottomed 3-quart saucepan. Add the unsalted butter and kosher salt to the saucepan and bring the mixture to a rolling boil over medium-high heat.
- Once boiling, remove the pan from the heat and immediately add all the all-purpose flour at once. Stir vigorously and continuously with a wooden spoon or spatula over LOW heat until the mixture comes together to form a cohesive ball of dough. Continue stirring for about 1 minute. You’ll know it’s done correctly when a thin film forms on the bottom and sides of your pan. This process is crucial for developing the proper texture.
- Remove the pan from the heat and transfer the dough to the bowl of a stand mixer fitted with a paddle attachment, or to a heat-proof bowl if you are using a hand mixer. Let the dough rest for 5 minutes to cool slightly.
- While the dough rests, prepare your frying setup. Pour 1 inch of peanut or canola oil (or lard for a traditional flavor) into a heavy-bottomed, high-sided frying pan or pot. Heat the oil over medium-high heat until it reaches 375°F (190°C). A kitchen thermometer is highly recommended for accurate temperature control.
- Return to the mixer. Add the large eggs all at once to the cooled dough. Beat on high speed until the eggs are fully incorporated into the dough and the mixture is smooth and glossy. The dough should hold the shape of the beater or paddle when lifted.
- Scrape the finished dough into a large pastry bag fitted with a large star tip (with a 1/2-inch opening) or a large round tip (also with a 1/2-inch opening). Twist the top of the pastry bag and secure it shut with a twist-tie. Carefully pipe 4-inch strips of dough directly into the hot oil. If necessary, use the blunt side of a butter knife to help release the strips from the pastry tip. I often find this step helpful.
- Fry only 4 to 5 strips at a time; do not overcrowd the pan, as the churros will expand as they cook. Fry them until they are golden brown and crispy, which typically takes about 2 minutes per side. Use tongs to turn them as needed.
- Once golden, remove the churros from the oil and drain them on plates lined with paper towels to absorb excess oil. While still warm, sprinkle them lightly with cinnamon sugar. Serve immediately with a bowl or squeeze bottle of the prepared Butter Rum Caramel. Enjoy these light, crispy, and utterly delicious Banana Churros!
