Boasting a perfectly chewy exterior, a wonderfully soft interior, and crisp, cinnamon-sugar-crusted edges, they capture everything you adore about classic snickerdoodle cookies but in a much more convenient, easy-to-make bar form. This recipe promises a comforting, nostalgic treat that’s perfect for any occasion, from casual weeknights to festive gatherings.

The Unforgettable Charm of Snickerdoodle Cookie Bars
For many, the mere mention of snickerdoodles conjures a wave of cherished childhood memories. It’s a flavor profile deeply ingrained in our collective culinary consciousness—a comforting embrace of sweet, buttery dough kissed with the warm, spicy notes of cinnamon and the unique tang of cream of tartar. Whether these classic cookies were a staple from your grandmother’s kitchen or a beloved treat from local bakeries, the undeniable comfort and joy they bring are universal. This recipe transforms that classic experience into an even more accessible and equally delicious format: the snickerdoodle cookie bar.
While traditional snickerdoodles, with their characteristic crinkled tops and individual rounded shapes, are certainly a labor of love worth undertaking, they often require a bit more time and precision—from chilling the dough to rolling each cookie in cinnamon sugar by hand. When a sudden craving for that distinctive chewy, soft, and tangy cookie hits, especially late at night, the thought of an involved baking process can be daunting. This is where the magic of easy snickerdoodle bars enters the scene, offering a streamlined path to snickerdoodle bliss. Imagine all that incredible flavor and texture, baked as one glorious, golden slab that simply needs to be cut and served.

Why Snickerdoodle Bars Are a Game Changer
Beyond the sheer delight of their taste, these snickerdoodle bars offer a multitude of advantages that make them a standout in the world of homemade desserts. They embody all the wonderful characteristics of a classic snickerdoodle but in a format that’s significantly easier and faster to prepare. The process is straightforward: simply whip the dough together, press it evenly into a baking pan, generously sprinkle it with the iconic cinnamon sugar topping, bake until golden, and then cut into squares. It’s truly that simple, saving you precious time without sacrificing flavor.
Convenience Meets Crowd-Pleasing Goodness
The benefits of opting for bar cookies extend far beyond mere convenience. If you’re looking for a dessert that’s perfect for shipping to loved ones or including in a thoughtful care package, these bars are an ideal choice. Their sturdy, rectangular shape allows them to stack neatly and compactly, making them much easier to box and mail securely compared to delicate, traditional round cookies. You won’t have to worry about them jostling around and crumbling during transit – they arrive looking as good as they taste.
Moreover, snickerdoodle bars are a dream come true for entertaining. Whether you’re hosting a casual get-together, preparing for a bake sale, or contributing to a potluck, a single batch yields a generous number of servings, making them incredibly efficient for feeding a crowd. The ease of preparation means you can spend less time fussing in the kitchen and more time enjoying the company of your guests.
The Secret to Superior Texture: Butter and Shortening
While many classic snickerdoodle recipes rely solely on butter, our bar cookie variation incorporates a touch of shortening. This strategic addition plays a crucial role in achieving the perfect texture. Because we’re essentially baking one large, cohesive cookie, the shortening helps to keep the bars incredibly soft and tender throughout, ensuring that delightful chewiness that defines a truly great snickerdoodle. The combination of butter and shortening provides a rich, buttery flavor alongside that desirable melt-in-your-mouth tenderness. This blend ensures your bars are never dry or crumbly, maintaining their moist, soft character for days.
Perfect Pairings and Serving Suggestions
These glorious snickerdoodle cookie bars are fantastic on their own, but they also shine when paired with your favorite beverages. For a cozy treat, enjoy them with a glass of cold milk, or elevate the experience with a warm, spiced drink. Consider our homemade Spiced Orange Chai Concentrate for a fragrant, comforting sip, or indulge in a decadent Dulce de Leche Chai Latte. During the colder months, a rich Peppermint Mocha or Hot Chocolate makes an exceptional companion, creating a truly irresistible dessert experience.

Equipment
- 1 hand mixer or stand mixer
- Mixing bowl
- Silicone spatula
- 9×13-inch pan
- Parchment paper (optional)
- Knife
Ingredients
- 1/2 cup butter softened
- 1/2 cup shortening
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour (11 2/3 ounces)
- 1 1/2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Nonstick cooking spray
Snickerdoodle Topping:
- 2 Tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350º F (175°C). Lightly spray a 9×13-inch pan with nonstick cooking spray or line it with parchment paper and then spray lightly. Set aside.
- In a large mixing bowl, using a stand mixer, hand mixer, or sturdy spoon, cream together the softened butter, shortening, 1/2 cup granulated sugar, and brown sugar until light and fluffy. Beat in the eggs and vanilla extract until well combined.
- In a separate small bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined and no dry streaks remain. Be careful not to overmix.
- Press the cookie dough evenly into the bottom of the prepared 9×13-inch pan.
- In another small bowl, whisk together the 2 tablespoons of granulated sugar and the ground cinnamon for the topping. Sprinkle this mixture evenly over the top of the dough in the pan.
- Bake for 22-26 minutes, or until a knife inserted into the center comes out clean. It’s crucial not to overbake these cookie bars to maintain their tender, chewy texture.
- Allow the snickerdoodle bars to cool completely in the pan on a wire rack before cutting them into 24 pieces. This ensures clean cuts and helps them set properly.
- Store any leftover bars in an airtight container at room temperature for up to one week to maintain their freshness.
