Crunchy, refreshing slices of raw jicama cradled around crisped pork carnitas, Cucumber Sweet Onion Salsa, cilantro, radishes, and hot sauce.

Ingredients (Yields 12 Tacos)

  • 1 teaspoon neutral oil (such as canola, grapeseed, or peanut oil)
  • 1 cup leftover pulled pork
  • 12 paper-thin slices of peeled, raw, whole jicama
  • 1/2 cup Cucumber Sweet Onion Salsa
  • 2 radishes (scrubbed and sliced paper thin or into matchsticks)
  • 1/4 cup fresh cilantro leaves
  • hot sauce (to taste)

Instructions

  1. Place a heavy-bottomed skillet over medium-high heat and drizzle in the neutral oil. Once the pan is hot and the oil shimmers, add the pulled pork (carnitas). Break it up slightly with a sturdy wooden spoon and allow it to heat thoroughly, crisping in places. Remove the pan from the heat.
  2. Gently fold each jicama slice into a taco shape. If using a taco holder, place them in the holder to maintain their shape.
  3. Divide the crisped pork evenly among the jicama shells.
  4. Next, spoon the Cucumber Sweet Onion Salsa into each taco, followed by the radishes and fresh cilantro leaves.
