These aren’t your average homemade brownies. They are a statement, an indulgent masterpiece crafted with love and attention. While the initial impression might suggest complexity, the steps are straightforward, and the result is absolutely worth every moment. We begin with a thin, yet incredibly fudgy and chewy brownie layer, providing the perfect foundation. But the true magic unfolds with the legendary filling.
Unveiling the Signature Pistachio Kataifi Layer
The heart and soul of these Dubai Chocolate Brownies lie in their distinctive filling. This exquisite layer is created by tossing delicate strands of kataifi pastry, butter-toasted to golden perfection, in a luscious mixture of sweet pistachio cream and a subtle touch of tahini. If you’re familiar with nut butters, think of pistachio cream as a sophisticated, sweeter cousin to peanut butter, but with the distinct, verdant flavor of pistachios. Tahini, a rich sesame seed spread, adds an earthy depth that beautifully complements the sweetness of the pistachio, creating a flavor profile that is both familiar and exotic.

Dubai Brownies: The Mystery of Kataifi Unraveled
For many outside the Middle East, kataifi might be an unfamiliar ingredient. Also known as kadayif, kataifi is a fascinating form of shredded phyllo dough, resembling fine, delicate noodles. This versatile pastry is a staple in Middle Eastern cuisine, predominantly used in an array of sweet desserts but also making appearances in savory dishes. While traditionally it can be a labor of love to prepare from scratch, its recent surge in popularity, largely due to viral chocolate bars, has made it much more accessible. Retailers like Amazon now stock it readily, making it easier than ever to recreate these gourmet treats at home.
Once you’ve had the chance to butter-toast a small pinch of kataifi, you’ll instantly understand its allure. Its texture and flavor are truly unique. Imagine taking the crispy, flaky outer layer of a perfectly baked croissant and shredding it into thin strips – that’s akin to the delightful crunch and rich, buttery taste of toasted kataifi. What makes kataifi truly special, however, is its remarkable ability to maintain its shatteringly crisp texture, even when coated in creamy pistachio goodness and left overnight. This resilience is what allows these brownies to boast such an incredible textural contrast, setting them apart from other desserts.

Crafting Perfection: A Rewarding Culinary Endeavor
While these decadent brownies aren’t overly complicated, they do require a bit of mindful attention and care, particularly in sourcing ingredients and mastering the kataifi toasting. But rest assured, the unparalleled flavor and texture profile you achieve will be immensely rewarding!
The brownie base itself is designed for success. We’ve chosen a recipe that yields a thin, dense, and wonderfully fudgy brownie, robust enough to support the generous layers of pistachio kataifi and rich ganache without becoming soggy. For those moments when time is of the essence, you can certainly opt for a quality box mix brownie or even pre-baked plain brownies. However, for the ultimate experience, we highly recommend preparing the brownies from scratch – trust us, every homemade component adds to the magic.
The primary effort involved in this recipe often comes down to tracking down the specialty ingredients: kataifi and pistachio cream. Tahini is widely available in most well-stocked grocery stores. If you’re fortunate enough to have a Middle Eastern market or a global grocer nearby, you might find both kataifi and pistachio cream there. Otherwise, online retailers, particularly Amazon, are excellent sources for these unique items, ensuring you don’t miss out on this extraordinary dessert.

Dubai Chocolate Brownie Recipe: Mastering the Layers
The Art of Toasting Kataifi
When it comes to the hands-on preparation, the most crucial step, and one that demands your undivided attention, is toasting the kataifi in melted butter. Due to its delicate, fine structure, kataifi can scorch very quickly. There’s no shortcut here: you’ll need to stand by your pan, constantly flipping and stirring the pastry for about 10 to 18 minutes. This patient process transforms the pale, unassuming kataifi into a glorious deep golden hue, unlocking its incredible nutty flavor and signature crispness. Resist the temptation to crank up the heat under the pan; doing so will likely result in burnt pastry within seconds, and nobody wants that. Use a flat spatula in one hand and a wooden spoon in the other for optimal control, ensuring even browning. Your kitchen will fill with an intoxicating aroma during this step – if you can resist snacking on the warm, toasted strands, you possess far more willpower than most!

The Decadent Milk Chocolate Ganache
The crowning glory of these brownies is a luscious milk chocolate ganache, surprisingly simple to prepare. It involves merely scalding heavy cream and pouring it over high-quality milk chocolate chips. For the best possible flavor and texture, we strongly recommend using premium milk chocolate chips, such as those from Ghirardelli or Guittard. The quality of your chocolate will significantly impact the richness and smoothness of the final ganache, tying all the intricate flavors of the brownie and pistachio layer together into a harmonious whole.
Without further ado, it’s time to don your apron and get baking. Be forewarned, however: once you taste these extraordinary Dubai Chocolate Brownies, your standard for dessert may be forever changed!

Prep Time: 15 minutes
Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes
Yields: 16 brownies
Equipment
- 2 quart saucepan
- Measuring spoons and cups
- Large frying pan
- Wooden spoon or heatproof silicone spatula
- Mixing bowl
- Whisk
- 8×8 or 9×9 inch baking pan
Ingredients
For the brownies:
- ¼ cup butter
- 1 cup semi-sweet chocolate chips
- ½ cup light brown sugar
- 1 tablespoon vanilla extract
- 2 eggs
- ½ cup all-purpose flour
- ¼ teaspoon kosher salt
For the Dubai Pistachio Layer:
- 6 tablespoons butter
- 10 ounces kataifi (chopped or broken into 1/2″ pieces, about 5 cups)
- 3 tablespoons tahini
- 1 1/2 cups pistachio cream (divided)
- 2 cups milk chocolate chips (340 g.)
- 1/2 cup heavy cream
Optional but tasty:
- 1/4 cup coarsely chopped pistachios
- Flaky sea salt for garnish
Instructions
To Make the Brownies:
- Preheat the oven to 325°F (160°C). Line an 8×8 or 9×9 inch pan with parchment paper or foil, ensuring an overhang on two opposite sides for easy removal. If using foil, grease it generously with softened butter.
- Melt ¼ cup of butter in a 2-quart saucepan over medium heat. Remove the pan from the heat, then add the semi-sweet chocolate chips to the melted butter. Let this mixture stand for 2 minutes to allow the chocolate to melt, then stir until fully melted and smoothly combined.
- Add the light brown sugar to the chocolate mixture and stir thoroughly. Stir in the vanilla extract, then beat in the eggs one at a time until the mixture is smooth and well incorporated.
- Gently fold in the all-purpose flour and kosher salt, mixing just until no dry pockets of flour remain. Be careful not to overmix.
- Spread the brownie batter evenly into the bottom of the prepared pan. Bake for 28-32 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Allow the brownies to cool completely in the pan before proceeding to the next layer.
To Make the Dubai Pistachio Filling:
- While the brownies are baking and cooling, melt 6 tablespoons of butter in a large skillet over medium-low heat. Add the chopped kataifi and begin to toast, stirring frequently. Reduce the heat to low if the kataifi starts to darken too quickly. Continue toasting until it reaches a deep golden color, which typically takes 15 to 18 minutes. Remove the pan from the heat.
- Once the toasted kataifi has slightly cooled, fold in the tahini and 1 ¼ cups plus 2 tablespoons of the pistachio cream. Mix until the kataifi is evenly coated.
- Spread this kataifi mixture evenly over the completely cooled brownies. Gently level and compress the layer to create a mostly smooth surface. Allow this layer to cool completely before adding the ganache.
To Add the Ganache Layer:
- Place the milk chocolate chips in a heatproof medium bowl. Heat the heavy cream in a small saucepan over medium heat until small bubbles form around the edges of the pan. Do not boil.
- Pour the hot cream over the milk chocolate chips. Let it sit undisturbed for 2 minutes to allow the chocolate to melt. Then, whisk gently until the chocolate is fully melted and the ganache is smooth and glossy.
- Pour the warm ganache evenly over the pistachio kataifi layer. Take the remaining pistachio cream, stir it to loosen its consistency, then use a spoon to drizzle it decoratively over the ganache. Use a skewer or toothpick to gently swirl the drizzled pistachio cream into the ganache, creating a beautiful marbled effect (be careful not to disturb the kataifi layer underneath).
- If desired, garnish the brownies with coarsely chopped pistachios and a light sprinkle of flaky sea salt for an extra touch of flavor and visual appeal.
- Allow the ganache to firm up completely at room temperature or in the refrigerator for easier cutting. Once firm, use the parchment paper overhang as a sling to lift the entire brownie slab onto a cutting board. Cut into desired squares.
- Store any leftover Dubai Chocolate Brownies in a tightly covered container in the refrigerator to maintain freshness.
