Ingredients

  • 1 top round beef roast (Preferably Certified Angus Beef Brand, about 3 pounds)
  • 1/2 cup brown sugar
  • 1/4 cup kosher salt
  • 1 tablespoon Korean chili pepper powder
  • 1 tablespoon black sesame seeds
  • 2 teaspoons granulated garlic
  • 1 tablespoon neutral oil (canola, grapeseed, or vegetable)

Instructions

  1. Cut the top round roast lengthwise into 1-pound (approximately) logs. Set aside. In a small mixing bowl, use a fork to combine the brown sugar, kosher salt, Korean chili pepper powder, black sesame seeds, and granulated garlic. Rub this mixture thoroughly over all surfaces of the beef logs. Place the rubbed beef logs on a rimmed plate, cover tightly with plastic wrap, and refrigerate overnight to allow the flavors to meld and tenderize the meat.
  2. The next day, preheat your oven to 450°F (232°C). Position a roasting rack within a roasting pan and set it aside, preparing it for the beef.
  3. Heat the neutral oil in a cast-iron or other heavy-bottomed skillet over high heat until it begins to shimmer, indicating it’s hot enough for searing. Carefully use tongs to lay the beef logs into the hot pan. You should hear a distinct sizzle upon contact. Sear the beef for about a minute on each side, turning with the tongs, until a rich brown crust develops. This searing step is crucial for building flavor. Once seared, use the tongs to transfer the beef logs to the prepared roasting pan with the rack. Roast for 15 minutes at the initial 450°F (232°C). After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until an instant-read thermometer inserted into the thickest part of the beef registers 120°F (49°C) for rare, or your desired doneness.
  4. Remove the roasting pan from the oven and lightly tent the beef with foil. This crucial resting period allows the juices to redistribute throughout the meat, ensuring a tender and moist final product. Let the beef rest for at least 10 minutes before slicing it thinly across the grain. Serve immediately and enjoy the succulent flavors!
