There are some culinary creations so profoundly comforting, so utterly delightful, that they redefine the very notion of a treat. Chocolate Cherry Doughnut Bread Pudding is unequivocally one of them. Imagine the dilemma: you’ve over-purchased doughnuts, and they’re starting to lose their fresh appeal. Instead of lamenting, embrace the opportunity! This recipe transforms those humble glazed doughnuts into an extraordinary dessert, a rich and creamy bread pudding elevated by bursts of sweet black cherries and decadent dark chocolate chunks. It’s more than just a dessert; it’s an experience, a symphony of flavors and textures designed to bring pure joy with every spoonful.

Indulgence Redefined: The Magic of Doughnut Bread Pudding
While a simple doughnut might be an everyday pleasure for some, its true potential as a star ingredient shines brightest in this bread pudding. What makes this particular version so captivating? It’s the seamless marriage of textures and tastes. The glazed doughnuts, when steeped in a rich custard, transform into an incredibly moist, almost soufflé-like base that melts in your mouth. This isn’t just any bread pudding; it’s a gourmet experience where familiar ingredients unite to create something truly magical.
But the enchantment doesn’t stop there. The addition of juicy, sweet black cherries provides a vibrant counterpoint to the richness, cutting through the sweetness with a delightful tartness. And then, there’s the dark chocolate. Large chunks of bittersweet or dark chocolate melt into glorious pockets of molten deliciousness, creating a luscious ribbon of chocolate throughout the pudding. Each bite offers a harmonious blend of creamy doughnut, fruity cherry, and intense chocolate—a truly irresistible combination that beckons you back for more.
This dessert transcends traditional boundaries. While it’s certainly a show-stopping end to any meal, its comforting qualities make it perfectly acceptable as an indulgent afternoon snack alongside a warm cup of coffee or tea. Some might even argue it’s a perfectly legitimate breakfast option – after all, it starts with doughnuts! While perhaps not an everyday staple, this Chocolate Cherry Doughnut Bread Pudding is the ultimate act of self-care, a delicious reward when you need a little pick-me-up.

Mastering Your Chocolate Cherry Doughnut Bread Pudding: Expert Tips for Perfection
Creating this decadent dessert is straightforward, but a few expert tips will ensure your Chocolate Cherry Doughnut Bread Pudding reaches its full potential, transforming it from delicious to absolutely sublime. Pay close attention to these details for an unforgettable culinary experience.
- Choosing Your Doughnuts Wisely: The type of doughnut you use significantly impacts the final texture. This recipe is specifically developed for glazed, yeast doughnuts, like the kind from popular chains such as Krispy Kreme. Their light, airy texture and sweet glaze are essential for achieving that signature creamy, soufflé-like consistency. Cake doughnuts, with their denser crumb, may behave differently and are not recommended for this particular recipe.
- The Art of Stale Doughnuts: While it might seem counterintuitive, stale doughnuts are a secret weapon in bread pudding. Fresh doughnuts are too soft and will turn mushy. For the best results, aim for doughnuts that are at least three days old. If you’re pressed for time, you can accelerate the drying process by chopping your doughnuts into 1-inch cubes and letting them air dry uncovered overnight. For an even quicker solution, lightly toast the chopped doughnuts in a 250°F (120°C) oven until they are dry to the touch, being careful not to brown them.
- The Power of an Overnight Soak: Patience is a virtue when it comes to maximizing flavor and texture. If you can, mix the doughnut cubes with the custard base and allow them to soak in the refrigerator overnight before baking. This extended resting period allows the doughnuts to fully absorb the rich custard, resulting in a more uniformly creamy and flavorful end product that is perfectly tender throughout. If an overnight soak isn’t feasible, don’t worry—your bread pudding will still be delicious, though perhaps not quite as exquisitely uniform.
- Cherry Thawing for Even Baking: If you’re opting out of the overnight soak, ensure your frozen black cherries are completely thawed before mixing them with the chopped doughnuts and chocolate. Incorporating frozen cherries directly into the mixture can significantly prolong the baking time, potentially leading to an unevenly cooked pudding with some parts overdone while others remain undercooked.
- Chocolate Choices and Variations: The original recipe calls for bittersweet chocolate chunks, favored for their intense flavor and the delightful, irregular pockets of melted chocolate they create. However, feel free to adapt to your taste. Dark chocolate chunks or semi-sweet chocolate morsels are excellent substitutes. For those with a sweeter palate, or if you’re feeling adventurous, milk chocolate chips could be a delicious alternative. If you try it with milk chocolate, we’d love to hear about your results!
- Scaling Up for a Crowd: Planning to feed more than a few? This recipe doubles beautifully. Simply use a 9-inch x 13-inch baking dish. Be aware that doubling the recipe will increase the baking time. Expect it to take up to 110 minutes. Keep a close eye on it; it’s done when uniformly puffy and set, with a slight jiggle in the center. For absolute precision, an instant-read thermometer should register between 165°F (74°C) and 170°F (77°C) in the center.
- The Perfect Garnish: To complement the richness of this bread pudding, consider a topping of cream that has been just lightly whipped to a slightly thickened consistency. You’re not aiming for stiff peaks, but rather a luscious, flowing cream that beautifully coats each spoonful and mingles with the melted chocolate pockets and sweet cherry crevices, adding another layer of luxurious texture. A light dusting of powdered sugar also adds a touch of elegance and extra sweetness.

Ingredients
- 4 eggs
- 2 1/2 cups whole milk
- 2 tablespoons melted butter, plus extra for the pan
- 1 tablespoon Whiskey Vanilla Extract or Pure vanilla extract
- 1/8 teaspoon freshly ground nutmeg
- ½ cup sugar
- 5 cups stale glazed yeast doughnuts, cut into 1-inch cubes
- 1 1/2 cups frozen black cherries
- 3/4 cup bittersweet or dark chocolate chunks
- non-stick cooking spray
Optional for serving:
- a dusting of powdered sugar
- whipping cream whipped just long enough to slightly thicken it
Instructions
- Beat the eggs, then add the milk, melted butter, vanilla, and nutmeg, whisking to combine evenly. Add sugar and whisk until sugar is dissolved. Toss together the doughnut cubes, cherries, and chocolate chunks. Generously butter a 9-inch baking dish or deep dish pie pan. Arrange the doughnut mixture tightly in the prepared dish. Pour the liquid custard over the doughnuts. Press down lightly on the stale doughnuts to help them absorb the custard. Spray a piece of foil with cooking spray and place sprayed side down over the dish. Allow it to rest in the refrigerator for at least an hour or, ideally, overnight so the doughnuts can fully soak up the custard.
- After the mixture has soaked, let the pan rest on the counter top while you preheat the oven to 325°F (160°C). Place a bread or cake pan full of boiling water on the lower shelf of the oven to create a moist environment (a water bath). Bake the bread pudding on the upper shelf for 55 to 70 minutes, removing the foil after the first 40 minutes, or until the bread pudding is uniformly puffy and the crust is golden brown all over the top. Remove the Chocolate Cherry Doughnut Bread Pudding from the oven and allow it to cool and set up for 30 minutes before scooping and serving. If desired, dust with powdered sugar and spoon barely thickened cream over the bread pudding before serving.
