Ingredients

  • 2 cups brown sugar (Sucanat or raw sugar also work wonderfully)

  • 2 whole cloves
  • 1 whole bottle Everclear Pure Grain Alcohol (750ml, 190 or 195 proof – *see important notes below for safe handling)
  • 1 cup vodka
  • 4-8 vanilla beans (cut in half lengthwise, Optional, but adds a wonderful “a la mode” flavor)
  • 6-8 quart jars OR 12-16 pint jars or a combination thereof (sterilized, with new 2-piece lids for proper sealing)

  • In a large, heavy-bottomed pot, combine the apple cider, unsweetened apple juice, brown sugar, 6 cinnamon sticks, the chunk of whole nutmeg, and the whole cloves. Bring this mixture to a rolling boil over medium-high heat, stirring occasionally to ensure the sugar dissolves completely. Once boiling, immediately remove the pot from the heat, cover it tightly, and allow the mixture to cool down completely to room temperature. This cooling process is crucial for safety and flavor. Only once the mixture is absolutely cool, gently stir in the Everclear and vodka.
  • Carefully pour the prepared Apple Pie Moonshine into your sterilized jars. For each quart-sized jar, add 1 extra cinnamon stick and 1/2 of a vanilla bean (if desired for the “a la mode” flavor). For pint-sized jars, you might opt for half a cinnamon stick and a smaller piece of vanilla bean.
