  • 1 quart jar crushed tomatoes (or 4 cups canned crushed tomatoes)
  • 3 cups cooked black beans (drained, rinsed, canned beans can be used if home-cooked aren’t available. For extra depth, simmer home-cooked beans with a smoked pork neck bone.)
  • 4-5 cups cooked, shredded or cubed chicken (This is roughly equivalent to the meat from 5 bone-in roasted chicken breast halves.)
  • 10 cups chicken stock (Homemade garlic chile chicken stock is recommended for superior flavor, but purchased stock works well. If using purchased, consider increasing garlic by 3 cloves.)
  • 6 ounces tomato paste (Optional, for a thicker soup.)
  • 1-2 fresh jalapeños, minced (adjust to taste, or use 1-4 tablespoons candied or jarred minced jalapeños)
  • 4-8 corn tortillas, minced (Start with the smaller amount to thicken the soup, add more for a denser consistency.)
  • 3 tablespoons chili powder
  • 3 tablespoons dried oregano
  • 1/4 cup fresh lime juice
  • 1/2 cup chopped fresh cilantro, plus extra for garnish
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large, heavy-bottomed pot or Dutch oven, warm the olive oil over medium heat. Add the chopped onions, minced garlic, and a pinch of salt. Sauté, stirring occasionally, until the onions are semi-translucent and softened, about 5-7 minutes. This step is crucial for building a flavorful base.
  2. Stir in the crushed tomatoes, chicken stock, chili powder, and dried oregano. Bring the mixture to a rolling boil, then reduce the heat to a simmer and let it cook for 10 minutes, allowing the flavors to meld beautifully.
  3. Add the cooked black beans, shredded or cubed chicken, minced jalapeños, and the minced corn tortillas to the pot. Return the soup to a boil, then immediately reduce the heat to mid-low and continue to simmer for another 10 minutes.
