- 3 medium eggs
- 2 cups buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 6 to 7.5 cups all-purpose flour

Instructions
To Make the Legendary Sugar Cookie Dough:
- In the bowl of a stand mixer fitted with a paddle attachment, or in a large mixing bowl with a hand mixer, cream together the sugar and butter until light and fluffy. Beat the eggs in, one at a time, until fully incorporated.
- In a separate measuring cup, gently stir together the buttermilk and baking soda until just combined. Pour it and the vanilla into the butter mixture and beat on low speed until the liquid is incorporated, then increase the speed to high and beat until the mixture achieves a more even texture.
- Whisk or sift together the initial 6 cups of flour and salt. Add this dry mixture all at once to the butter and buttermilk mixture. Beat on low speed until just combined. Scrape down the bowl and beaters, then beat once more until the dough is even in texture. The dough should be firm but still slightly sticky. If needed, add more flour 1/4 cup at a time, beating until incorporated after each addition, until the desired consistency is reached.

- Transfer the cookie dough to a sheet of plastic wrap and gently pat it into a disc shape. Wrap tightly with the plastic wrap and refrigerate for at least 8 hours or overnight. This chilling process is essential for easy handling.
- Preheat the oven to 350°F (175°C). Grease your baking sheets or line them with parchment paper.
