Irresistible Cinnamon Maple Candied Almonds

Irresistible Cinnamon Maple Candied Almonds: Your New Favorite Sweet and Crunchy Snack

I often affectionately refer to my husband as ‘The Evil Genius,’ a term that might sound like an insult to some, but holds a special meaning in our quirky household. This endearing nickname stems from a classic geek dilemma I once posed to him while we were dating: “If the Star Wars universe were real, would you align with the Rebel Alliance or the Empire?”

My expectation, naturally, was a resounding “REBEL!”—just like my own unwavering allegiance. Instead, he paused, a thoughtful tilt to his head, and declared, “The Empire. They simply possess superior technology.” And just like that, I married into the Dark Side. But let’s be honest, the Dark Side was undeniably charming.

The ‘genius’ aspect of his moniker is, without a doubt, self-explanatory. My husband is remarkably brilliant. He possesses an uncanny ability to unravel complex problems that baffle others, programming intricate machines to perform sophisticated robotic feats. His knack for improvising and making things work is legendary. I once witnessed him carry a golf club in an old car that had a habit of stalling at traffic lights. His ingenious solution? Three sharp raps to the upper right quadrant of the hood with that golf club would restart the engine, all without him ever having to step out of the vehicle. It’s these charming quirks that make me love that man fiercely.

A Deep Dive into the Dark Side’s Favorite Snacks

My sweet Evil Genius has a particular fondness for dried fruit and nuts. Specifically, raisins and almonds are his ultimate go-to snacks. He enjoys them straight from the jar, but his absolute favorite way to consume them is sprinkled generously over salads. Given a choice, he would happily devour a salad piled high with almonds and raisins over almost any other meal.

And because making him happy is one of my greatest joys, for a special Valentine’s Day, I decided to craft a snack that would make his heart sing—quite literally, a healthy pitter-pat of joy! After all, almonds are known for their heart-healthy benefits, so it was a win-win.

The result? A batch of homemade Cinnamon Maple Candied Almonds. This incredibly simple-to-make treat is not only utterly delicious but also boasts impressive longevity, staying fresh for weeks when stored in an airtight container. It’s perfect for direct snacking, and as expected, an exquisite garnish for salads. My darling husband even took it a step further, chopping a handful of these candied delights and tossing them into his morning oatmeal alongside a generous fistful of raisins. The happy sounds that followed were music to my ears.

Why You’ll Fall in Love with These Candied Almonds

The true testament to their deliciousness arrived when our children discovered the jar of Cinnamon Maple Candied Almonds. My thirteen-year-old, in particular, became an immediate devotee. He stood over the jar, repeatedly dipping his eager hands in, sighing happily with each bite. When he finally came up for air, his declaration was priceless: “I can’t help myself! They taste like little cookies!”

And he’s absolutely right. The rich, robust maple syrup, combined with the warm, fragrant cinnamon, creates a wonderfully sweet and crunchy crust around each perfectly roasted almond. This coating genuinely evokes the comforting flavor of a cinnamon raisin cookie, but with an added, distinctive maple depth. It’s a truly unique taste experience.

What’s fascinating is how these candied nuts transform their identity depending on how they’re served. As delicious as they are on their own, a sprinkle of these roasted candied almonds over a fresh spinach salad, adorned with crumbled bleu cheese and a simple oil and vinegar dressing, completely changes their character. They stop tasting like cookies and instead provide the perfect, unexpected burst of sweetness and crunch, elevating the entire salad to a gourmet level. This versatility makes them an indispensable addition to any pantry.

The Magic of Maple and Cinnamon: A Deeper Look

Let’s take a moment to discuss the cornerstone ingredient of this recipe: maple syrup. My personal preference leans towards a dark, strong maple syrup. The reason is simple: it delivers a more intense, “oomphy” maple flavor with less syrup, ensuring a rich taste without making the almonds overly sweet or sticky. Different grades of maple syrup offer varying flavor profiles; the darker the grade, the stronger and more pronounced the maple taste.

However, if you’re not a hard-core maple syrup enthusiast, or simply don’t have it on hand, there are excellent substitutions. You can opt for dark Karo syrup, which offers a similar consistency and mild sweetness. Another fantastic alternative is dark brown sugar, used in equal parts for the syrup. If you choose to use brown sugar, remember to whisk the egg white with a tablespoon of water before combining it with the nuts. This small adjustment ensures the coating adheres properly, resulting in that irresistible crisp texture. Each alternative will slightly alter the flavor profile, but all will result in a delightful candied almond snack.

Unleash Their Potential: Versatile Serving Suggestions

These Cinnamon Maple Candied Almonds are not just a simple snack; they are a culinary chameleon, capable of enhancing a wide array of dishes. Their exceptional versatility is one of their greatest charms:

  • Stand-Alone Snacking: The most obvious, and perhaps most frequent, use. Keep a jar on your desk for a healthy pick-me-up, or pack a small bag for an on-the-go energy boost. Their satisfying crunch and sweet flavor make them highly addictive.
  • Elevate Your Salads: As mentioned, they are phenomenal in green salads. Beyond spinach and bleu cheese, try them with mixed greens, goat cheese, dried cranberries, and a balsamic vinaigrette. They also add a delightful textural contrast to fruit salads, complementing berries, apples, and pears beautifully.
  • Breakfast Bliss: Sprinkle them generously over your morning oatmeal, Greek yogurt parfaits, or homemade granola for an added layer of flavor and crunch. They can transform a mundane breakfast into a gourmet experience.
  • Dessert Darling: Chop them finely and use them as a topping for vanilla ice cream, fruit crisps, or even puddings. Their warm cinnamon and maple notes pair wonderfully with creamy or fruity desserts.
  • Thoughtful Homemade Gifts: Package a batch of these candied almonds in pretty mason jars or decorative bags. They make a wonderfully personal and delicious gift for holidays, hostess presents, or just to show someone you care.
  • Cheese Board Companion: Serve them alongside a selection of cheeses, fresh fruits, and crackers for an elegant and flavorful addition to your next charcuterie board. Their sweetness beautifully balances savory cheeses.

No matter how you choose to enjoy them, these Cinnamon Maple Candied Almonds are guaranteed to become a cherished recipe in your repertoire.

Crafting Your Own Batch: Tips for Perfect Candied Almonds

Making these delicious candied almonds is surprisingly straightforward, but a few key tips will ensure your batch turns out perfectly crunchy and evenly coated every time:

  • Even Spreading: After coating, spread the nuts in a single, even layer on your baking sheet. Overcrowding will steam the nuts instead of roasting and candying them, preventing that desirable crispness.
  • Regular Stirring: Don’t skip stirring the nuts every 15 minutes during baking. This prevents them from sticking together, ensures even browning, and helps the coating dry uniformly.
  • Cool Completely: Allow the nuts to cool completely to room temperature on the baking sheet. They will crisp up significantly as they cool. Stir them occasionally during this process to break apart any clusters.
  • Airtight Storage is Key: Once completely cooled, transfer them to an airtight container, such as mason jars. This is crucial for maintaining their crunch and freshness for up to a month at room temperature.

Now, let’s get to the recipe so you can experience this delightful snack for yourself!

Cinnamon Maple Candied Almonds

Cinnamon Maple Candied Almonds

Recipe by: Rebecca Lindamood

Rich maple syrup and fragrant cinnamon form a sweet, crunchy crust around roasted almonds that tastes reminiscent of a cinnamon raisin cookie, but with a distinct maple twist. And as odd as it might sound, when tossed onto a spinach salad with crumbled bleu cheese and oil and vinegar, these roasted candied nuts stop tasting like cookies and instead provide the perfect little burst of sweetness and crunch, elevating any meal.

Ingredients

  • 4 cups shelled whole, raw almonds
  • 1 egg white
  • 1/3 cup maple syrup *See Notes
  • 1/3 cup raw or granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 250°F (120°C). Line a rimmed baking sheet with a Silpat mat or parchment paper (lightly spray the parchment with non-stick cooking spray).
  2. In a small bowl, thoroughly mix the sugar, cinnamon, and salt together with a fork until the spices are evenly distributed.
  3. In a large mixing bowl, whisk the egg white until it becomes very frothy. Whisk in the maple syrup until it is fully incorporated. Add the raw almonds to this mixture and toss them until they are completely coated. Sprinkle the cinnamon-sugar mixture over the almonds and toss again, ensuring an even coating on all nuts. Spread the coated nuts in a single, even layer on the prepared baking sheet.
  4. Bake the nuts for 45 minutes to 1 hour, making sure to stir them every 15 minutes. Continue baking until the nuts are dry to the touch and appear lightly golden. Remove from the oven and let them cool completely to room temperature on the baking sheet, stirring occasionally to break up any clusters.
  5. Once completely cooled, transfer the candied almonds to airtight containers, such as mason jars. Store them at room temperature for up to a month to maintain their freshness and crunch.
  6. Serve as a delightful stand-alone snack, pair with dried fruit, or use as a sophisticated garnish on your favorite salads.

Notes

*If you cannot find maple syrup or prefer an alternative, you can substitute an equal amount of dark Karo syrup or dark brown sugar. If using brown sugar, whisk the egg white with a tablespoon of water before combining with the almonds. This simple trick ensures the coating adheres perfectly!
