Ingredients
For the Salmon Burgers:
- 2 pounds salmon fillets skin and bones carefully removed
- 1 3/4 cups panko breadcrumbs preferably whole wheat, plus more if needed for coating
- 1 bunch green onions washed and thinly sliced
- ¼ cup mayonnaise
- 1 tablespoon pickling liquid from a jar of pickled ginger (Gari)
- Oil for pan-frying such as canola, peanut, or vegetable oil
For the Wasabi Mayonnaise:
- 1/2 cup mayonnaise
- 1-3 tablespoons wasabi paste adjust to your preferred level of spiciness
Optional Ingredients for Serving:
- Whole wheat buns toasted, or tender lettuce leaves (like butter or red leaf lettuce) for a lighter option
- Asian Pickled Carrots
- Asian Marinated Cucumber Salad
- Pickled ginger for garnish
Instructions
To Prepare the Burgers:

Cut the salmon fillets into 2-inch chunks. Place these chunks into the bowl of a food processor fitted with a metal blade. Pulse the salmon until it’s broken down into a chunky purée, with pebble-sized pieces (approximately ¼-inch) remaining for texture.

Scrape the processed salmon mixture into a medium-sized mixing bowl.

Prepare the green onions by cutting off the root ends, slicing them in half lengthwise, turning them 90 degrees, and then slicing them very thinly. Add the sliced green onions to the bowl with the salmon, along with ½ cup of the panko breadcrumbs, mayonnaise, and the pickled ginger liquid. Mix all ingredients thoroughly until they are uniformly combined.

Line a baking sheet with plastic wrap or parchment paper. Divide the salmon mixture into 8 equal mounds, and then gently form each mound into a patty, about ¾-inch thick. Cover the patties with plastic wrap and chill in the refrigerator for 1 to 8 hours before cooking. This helps them firm up and hold their shape during frying.

Pour the remaining panko breadcrumbs onto a shallow plate. Carefully lift each chilled salmon patty and place it onto the breadcrumbs. Press down lightly to ensure the panko adheres well, then flip the patty over and repeat the process on the other side, fully coating the burger.

Heat a large, heavy-bottomed skillet over medium-high heat. Once the pan is very hot, add approximately 1 tablespoon of cooking oil and swirl it to coat the bottom of the pan evenly.

Gently place the panko-crusted salmon patties into the hot skillet. A 12-inch pan should comfortably accommodate 4 patties, allowing enough space to maneuver your spatula. Cook for about 5 minutes, or until the first side achieves a deep golden brown and is crispy. Using a wide spatula, carefully flip the patties. Be mindful, as the oil may splatter slightly. Fry the second side for an additional 3 to 5 minutes, or until golden brown and firm around the outer edges. Transfer the cooked burgers to a plate or platter lined with paper towels to drain any excess oil. Add another tablespoon of oil to the pan and repeat the frying process with the remaining salmon burgers until all are cooked.
To Prepare the Wasabi Mayonnaise:

In a small bowl, combine the mayonnaise and 1 tablespoon of wasabi paste. Use a fork or a small whisk to stir until well combined. Taste the mayonnaise and, if desired, add more wasabi paste a little at a time until you reach your preferred level of spicy flavor.
