Living in Western New York offers a unique charm, even with its notoriously long winters. Beyond the snowy landscapes, our region boasts some truly remarkable things: the legendary Buffalo Wing Sauce that’s known worldwide, breathtaking natural wonders like Niagara Falls, the majestic gorges of Letchworth State Park, and the serene beauty of the Finger Lakes. And, of course, the unwavering spirit of the Buffalo Bills.

Yet, amidst all these regional treasures – and I say this with immense reverence, even for our beloved wing sauce – one institution stands above the rest for me: Wegmans. This isn’t just a grocery store; it’s a profound source of joy and culinary inspiration. Wegmans consistently delivers an unparalleled shopping experience, a true lifestyle rather than a chore.

A trip to Wegmans is often a delightful excursion. When time allows, I love to explore the vast array of artisan cheeses, pick up a freshly baked Black Olive Roll from their bakery, and if I’m especially lucky, treat myself to a steaming cup of soup from their incredible hot bar. It’s an experience that nourishes both body and soul.

For those who don’t have the good fortune of living near a Wegmans, my deepest sympathies go out to you. But fear not, for today, I bring you a little slice of that Wegmans magic directly to your kitchen. This recipe is a meticulous recreation of one of my absolute favorite offerings from their prepared food section: Lasagna Soup. Get ready to experience the comfort and flavor that captivated me from the very first spoonful.

Unveiling the Magic of Wegmans Copycat Lasagna Soup

If you’re new to the concept of lasagna soup, prepare to have your culinary world transformed. This ingenious dish masterfully combines all the quintessential components of traditional lasagna – savory meat, rich tomato sauce, decadent cheeses, and tender pasta – into a harmonious, creamy broth. The best part? There’s no arduous layering, no lengthy baking time, and absolutely no hassle. It’s all the flavor, none of the fuss, making it perfect for a comforting weeknight meal.

Over the years, I’ve experimented with various lasagna soup recipes, but the rendition from Wegmans has always held a special place in my heart. My initial encounter with this delightful soup occurred on a particularly chilly Buffalo afternoon. My family and I had stopped by the Wegmans hot bar, seeking a quick and warming lunch. The biting cold demanded something truly comforting, and this Italian turkey sausage soup exceeded every expectation. It delivered warmth from the inside out, offering a satisfying embrace that was exactly what I needed.

That first taste was so memorable that I immediately began to ponder how I could replicate its magic at home. As a passionate home cook, I’m constantly driven by the challenge of transforming beloved restaurant dishes into cost-efficient, homemade versions. My kitchen has seen successful copycat experiments ranging from Copycat Chipotle Barbacoa to a lightning-fast 5-Minute Restaurant Style Salsa. Recreating this lasagna soup became my next delicious quest.

After acquiring some quality Italian sausage and a variety of lasagna noodles, a little tinkering and taste-testing in my kitchen led to the perfected recipe I’m thrilled to share with you today. The true testament to its success came when I served it for dinner to my five loud and energetic sons, who range from teenagers to young adults. For a precious few minutes, something truly miraculous happened: there was complete silence at the dinner table. Every single one of them was utterly absorbed in devouring every last bite of this savory soup. That, my friends, is no small achievement. Even my pickiest eaters, who are notoriously hard to please, absolutely adored this Lasagna Soup.

What makes this soup truly exceptional is its balanced profile. While it’s brothier than many average lasagna soup recipes, it also manages to be wonderfully creamy. The vibrant spices inherent in the Italian turkey sausage (or pork, if you prefer) perfectly complement the tangy notes of the tomato sauce. The luxurious addition of ricotta cheese melts into the broth, adding a delightful creaminess and a subtle tang that rounds out the flavors beautifully. It’s a hearty, immensely satisfying, and unequivocally kid-approved meal that you’ll want to add to your regular rotation.

Essential Ingredients for Your Lasagna Soup

One of the many appealing aspects of this Lasagna Soup is its incredible pantry-friendliness. You likely already have most of the core components on hand. We’re talking about canned diced tomatoes or rich tomato puree, a jar of your favorite marinara or spaghetti sauce, versatile chicken or beef broth, dried pasta noodles, and either turkey or pork Italian sausage. The beauty of this recipe lies in its flexibility, so don’t let the absence of one specific ingredient deter you from creating this comforting meal.

Ingredient substitutions are not just allowed; they’re encouraged! For instance, if your ricotta cheese supply is running low, an equal amount of small curd cottage cheese can be used with excellent results, lending a similar creamy texture. If you find yourself without either, simply boost the amount of grated mozzarella cheese for that delightful gooey, cheesy happiness we all love in lasagna. The key is to taste and adjust the seasonings as you go, ensuring your soup is perfectly balanced.

No jarred spaghetti sauce in your cupboard? No problem at all! You can easily craft your own flavorful base by combining three cups of tomato puree with a couple of tablespoons of olive oil, a tablespoon of dried Italian seasoning, and two cloves of minced garlic. This simple mixture will provide all the rich, herbaceous notes you need.

The true non-negotiable elements for a successful lasagna soup are these foundational categories: some form of pasta noodles, a tomato base, a flavorful broth, and a generous amount of cheese. With these cornerstones in place, you have the freedom to improvise and adapt to what your pantry offers, resulting in a delicious and satisfying meal every time.

While you’re in the mood for making hearty soups, you might also want to explore some of my other popular recipes, perfect for cozy days. Consider saving this fantastic Vegetable Beef Barley Soup or my satisfying Hearty Kielbasa, Bean and Vegetable Soup for future meal plans. And to perfectly complement any soup, a warm, crusty bread is essential. For that, you could pick up a copy of my bread cookbook, Ready, Set, Dough! Beginner Breads for All Occasions, to bake some irresistible loaves right at home.

Another fantastic benefit of this Lasagna Soup recipe is its incredible simplicity. Seriously, it couldn’t be easier to make. Everything, from browning the sausage to simmering the broth and cooking the pasta, happens in a single pot. This translates directly to less cleanup – only one pot to wash! More time saved on dishes means more time to enjoy your delicious, comforting soup, or perhaps even indulge in a well-deserved nap. I know which I’d choose!

Choosing the Right Meat for Your Lasagna Soup

The original Wegmans Lasagna Soup recipe, which served as my inspiration, features savory Italian turkey sausage. This is a fantastic choice, offering both delicious flavor and a budget-friendly option for families. However, this recipe is wonderfully adaptable, allowing you to easily substitute Italian pork sausage if that’s your preference or what you have on hand. Both options provide a rich, spiced depth that is crucial for an authentic lasagna flavor profile.

If you’re feeling ambitious or simply can’t find pre-made Italian sausage, you can even craft your own bulk Italian sausage using a simple recipe. But don’t let a lack of Italian sausage stop you! If you have a pound of ground turkey, beef, or chicken, you can absolutely use it. Just be sure to enhance the seasonings to taste, adding extra dried Italian herbs, garlic powder, fennel seeds, and a pinch of red pepper flakes to mimic the distinctive flavor of Italian sausage. This flexibility ensures that you can always turn whatever protein you have into a delightful, budget-conscious meal that the entire family will eagerly enjoy. That’s a winning strategy in any kitchen!

Selecting the Perfect Noodles for Lasagna Soup

The choice of pasta can significantly influence the texture and overall experience of your Lasagna Soup. My personal favorite for this recipe is campanelle pasta. Its distinctive ruffled edges and conical shape are not only visually appealing but also do an excellent job of catching and holding the creamy, rich sauce, truly enhancing that authentic “lasagna-y” feel in every bite. It adds a delightful textual element that mimics the layered pasta sheets of traditional lasagna.

However, if campanelle isn’t readily available, fear not! You have several excellent alternatives. You can certainly use actual lasagna noodles, either the traditional variety broken into smaller, bite-sized pieces, or even the convenient no-boil lasagna sheets, similarly broken up. The goal is to have pieces that are easy to eat with a spoon while still providing that familiar pasta presence.

Beyond actual lasagna noodles, many other small-shaped pastas will work beautifully in this soup. Consider options like rotini, farfalle (bow-tie pasta), mini wheels, pipettes, classic elbows, or gemelli. The key is to select a noodle shape that has nooks and crannies or a good surface area to absorb and cling to the flavorful broth and sauce. These shapes ensure that every spoonful is packed with robust taste and satisfying texture. Don’t be afraid to experiment with what you have in your pantry; this soup is incredibly forgiving!

This hearty and creamy turkey (or pork) sausage soup truly captures the essence of the best lasagnas, but in a fraction of the time and with minimal cleanup. Inspired by the beloved Wegmans recipe, it stands as an easy, budget-friendly meal that is, without a doubt, 100% kid-approved and destined to become a family favorite.

Simple Steps to Create Your Lasagna Soup

Crafting this delicious soup is wonderfully straightforward, making it an excellent choice for cooks of all skill levels. Begin by pressing your bulk Italian sausage into a firm patty at the bottom of a deep soup pan or Dutch oven. Allow it to cook undisturbed over medium-high heat for about four minutes, developing a beautiful brown crust. Then, use a sturdy spoon or spatula to break the sausage into smaller, crumbles. Add the diced carrots and onions to the pan, stirring frequently with the sausage until the meat is thoroughly browned and the vegetables begin to soften, releasing their sweet aromas.

Next, introduce the minced garlic, stirring it in and cooking for just about one minute until its fragrant essence fills your kitchen. Pour in the marinara or spaghetti sauce, canned diced tomatoes (or tomato puree), and the chicken or beef broth. Bring this flavorful mixture to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and allow the soup to simmer gently until the carrots become tender, indicating they’ve absorbed all the wonderful flavors of the broth.

At this point, add your chosen pasta noodles and continue to simmer until they are perfectly al dente, or tender to your liking. While the pasta finishes cooking, take a small mixing bowl and combine the creamy ricotta cheese, shredded mozzarella, and a touch of granulated garlic. This cheese mixture will provide the signature creamy texture and cheesy goodness. Once the pasta is cooked, remove the soup from the heat and stir in the prepared cheese mixture until it is evenly distributed and beautifully melted throughout the soup. Ladle into bowls, and if desired, garnish with fresh parsley and basil for a burst of color and fresh flavor. Now, dig in and enjoy every comforting spoonful!
