While I’ve previously delved into the delights of a Watermelon Margarita at the Good Spirits Bar, savored a Bacon Cheeseburger from the Salty Dog Grill, and marveled at how the Ocean Medallion™ revolutionizes the cruising experience, today’s focus is on the most cherished ways to spend my days at sea. When envisioning a cruise, my thoughts invariably drift to two things: exceptional food and engaging onboard activities. The discovery that these two passions could merge seamlessly was truly a moment of pure joy, culminating in experiences that create lasting memories.

The Exclusive Chef’s Table Experience
For those unfamiliar, a Chef’s Table on land typically involves dining within the kitchen of a restaurant, enjoying bespoke dishes prepared by the chefs right before your eyes. The Chef’s Table Experience on Princess Cruises’ Caribbean Princess elevates this concept to an entirely new level. It offers a rare opportunity to tour the bustling galley—the heart of the ship where an astounding thousands of meals, desserts, and snacks are meticulously prepared daily for guests and crew alike. Witnessing the sheer scale and impeccable efficiency with which the culinary team operates is truly awe-inspiring.
Safety is paramount, so guests are required to wear closed-toe shoes for this behind-the-scenes galley tour. Upon arrival, the Head Maitre d’ greets you outside the galley, providing a crisp white lab coat to protect your clothing and maintain the kitchen’s pristine hygiene standards. As you walk through the vast space, you observe chefs in their gleaming white uniforms, diligently crafting various components for the ship’s numerous dining rooms and specialty restaurants. The spotlessness of every corner, the quiet yet dynamic energy, and the coordinated movements of the culinary professionals between dinner services create a captivating ballet of efficiency and precision.


Our group gathered at elegant standing tables adorned with beautiful floral arrangements, where we were formally introduced to the Executive Chef. The experience commenced with flutes of genuine French champagne, accompanied by an array of inventive and exquisitely presented appetizers. Highlights included a delicate chicken liver pate doughnut with orange jelly, succulent crab served in a crisp filo shell, a creative prawn hot dog with a hint of wasabi mayonnaise, and fresh tuna and caviar poke complemented by a unique Mai Tai sorbet. Each bite was a testament to the chefs’ creativity and skill.

Following this delightful aperitif experience and the conclusion of our galley tour, we shed our lab coats and were led to a serene, secluded area of the main dining room. Here, the main event unfolded: three phenomenal courses, each meticulously prepared and accompanied by a perfectly paired wine. A refreshing Negroni sorbet served as an inspired palate cleanser, leading into a grand finale dessert that remains etched in my memory. The evening culminated with group and individual photos with the Executive Chef, presented as cherished prints. Each guest also received an autographed copy of Princess Cruises’ acclaimed cookbook, “Courses, A Culinary Journey,” and a single, elegant long-stemmed rose – truly a night to remember!


This Chef’s Table experience comes with my highest recommendation for all aficionados of fine food and wine. Due to the limited availability and the swift booking of these exclusive spots, I strongly advise signing up at your earliest opportunity. Remember, reservations can only be made once you’re officially onboard. This coveted experience is typically offered just once or twice during each cruise. Upon settling into your cabin, simply dial the “dine” phone line or visit the “Dining Reservations” desk, which is conveniently set up on the first day of your cruise, to secure your place at this extraordinary culinary event.

Indulgence at the Lotus Spa and Salon
I confess a deep weakness for a luxurious spa treatment, and the Lotus Spa on the Caribbean Princess delivers nothing less than royal pampering. From the moment you step through its welcoming doors, you are enveloped in an atmosphere of serene tranquility. The plush robes and slippers, the soothing ambiance, and the attentive staff make the Lotus Spa my undisputed favorite sanctuary on the entire ship. (You’ll be spared the sight of me in said robe, I promise.)

During my spa time, I indulged in an intensive deep-tissue massage. Though my massage therapist was petite, her strength and expertise were akin to a human foam-roller, working wonders on every knot and tension point. The result was such profound relaxation that I can barely recall the journey back to my cabin or the restorative nap that followed, yet I know they happened! On our final sea day, I decided to try something new and received a keratin smoothing treatment at the onboard salon. My hair stylist meticulously washed my hair, applied a proprietary keratin formula, carefully dried it, and then sealed it with a flat iron. The transformation was spectacular! Following my stylist’s expert advice on post-treatment care, the stunning results lasted a full eight weeks after the cruise, proving to be an exceptional value for money.


Conveniently, the Lotus Spa and Salon are directly connected to a state-of-the-art, well-equipped gym. This fitness center boasts an impressive array of elliptical machines, treadmills, stationary bicycles, rowing machines, and a wide variety of weight machines. Guests can also participate in engaging classes led by the personal trainers on staff, ensuring that wellness and fitness goals can be maintained and even enhanced during your Caribbean Princess cruise.

Retreat to The Sanctuary
For those seeking an adults-only haven, or if you’re cruising with children who are happily engaged in youth programs, The Sanctuary is an absolute must-try. This luxurious, spa-inspired retreat on the ship’s top deck is exclusively reserved for adults, offering unparalleled tranquility and personalized service. The Sanctuary features sumptuously plush lounge chairs, where you can unwind while attentive Serenity Stewards cater to your every need. Soothing music drifts gently through the air, complementing refreshing beverages and light spa fare. For the ultimate indulgence, you can even enjoy an open-air massage within your own private cabana. This experience is tailor-made for those of us who possess an insatiable curiosity about how things work – the true “geeks” of the operational world. While I adore simply relaxing on the ship, there’s an undeniable thrill in witnessing the intricate operations and immense dedication that unfolds behind the scenes to make every cruise seamless and magical. This is precisely where the Ultimate Ship Tour shines brightest. Just like other exclusive activities, securing your spot on this tour requires prompt action at the Reservations Deck once you’ve boarded, as it also fills up remarkably fast.
The Ultimate Ship Tour offers unparalleled access to areas typically hidden from guests. You’ll delve into the backstage world of the ship’s theater, meeting the talented cast and dedicated production staff who bring the nightly entertainment to life. The tour continues with another, more in-depth exploration of the galley and food production area, where you’ll enjoy a flute of champagne and delectable hors d’oeuvres while meeting the Executive Chef. Next, you’ll venture into the high-tech Engine Control Room to meet the Chief Technical Officer, gaining insight into the mechanical heart of the vessel. The Chief Environmental Officer will then explain the ship’s innovative waste disposal and recycling processes, showcasing Princess Cruises’ commitment to sustainability. A visit to the print shop reveals how the daily “Princess Patter” is produced, and you’ll even receive personalized stationery as a unique souvenir.
But the journey doesn’t end there! You’ll also visit the photo lab, where all the ship’s digital photography is processed, and the Medical Center, where you’ll meet the certified maritime medical specialists—doctors and nurses—who ensure the health and safety of both crew and guests, prepared for any emergency. A stop at the impressive Main Laundry facility highlights the incredible volume of work involved, with over 20,000 towels alone laundered daily, not to mention all other linens. This truly puts into perspective the massive logistical undertaking of running a cruise ship.

Your aquatic adventure begins with a comfortable boat ride across the pristine, aqua waters of Grand Turk, heading towards a vibrant coral reef. Here, expert snorkeling instructors provide all necessary gear and comprehensive guidance, making the experience accessible and enjoyable for both seasoned snorkelers and first-timers. Immerse yourself in the breathtaking underwater world, marveling at the colorful coral formations and diverse local aquatic life. After soaking in these spectacular views, you’ll re-board your vessel for a short journey to Gibb’s Cay, famously known as Stingray City.

This tiny, uninhabited island, situated about a mile off the eastern coast of Grand Turk, is renowned for being a gathering spot for vast numbers of friendly and inquisitive stingrays in its shallow, crystal-clear waters. Swimming with these magnificent creatures is truly an unforgettable experience. Having grown up interacting with people and local guides who regularly feed them bits of squid and fish, these stingrays are remarkably gentle and approachable. You can watch in amazement as they gracefully glide towards the guides, who will demonstrate safe handling techniques and instruct guests on how to interact with and even feed them. While the sandy beaches are incredibly soft, if you choose to explore further inland, it’s advisable to wear shoes to navigate the rocky terrain, ensuring a comfortable and safe exploration of this unique island paradise.



The Heartwarming RePapel Experience in the Dominican Republic

This excursion truly captured my heart and stands out as a deeply meaningful experience. Founded in 1998, RePapel is a remarkable paper recycling and crafts cooperative nestled in a small, vibrant Dominican village. What began as an initiative to educate the community about the importance of recycling has flourished into a thriving, women-run organization. Here, discarded office paper and various other recyclables are ingeniously transformed into an array of exquisite paper products and artisanal crafts, showcasing both creativity and sustainability.

Visitors to RePapel are invited to engage in several hands-on DIY activities at various workstations. You can try your hand at jewelry making, candle crafting, sewing, or the fascinating process of recycling colored paper into beautiful, usable stationery and unique art pieces. Beyond the creative engagement, your visit directly supports the women who work here, as it includes opportunities to tutor them in English. This invaluable language instruction significantly enhances their ability to thrive and make a living within the Dominican Republic’s booming tourism industry, fostering economic empowerment and cultural exchange. It’s an excursion that feels good for the soul, combining environmental consciousness with community support.
Exploring San Juan, Puerto Rico: A Self-Guided Urban Adventure

San Juan, Puerto Rico’s bustling capital and largest city, offers a vibrant tapestry of history, culture, and culinary delights. Thanks to the excellent recommendations of a dear friend who hails from Puerto Rico, we opted for a self-guided exploration of the city rather than a planned excursion. This proved to be a fantastic decision, allowing us the freedom to wander and discover at our own pace. As an unincorporated territory of the United States, Puerto Rico is particularly well-suited for independent exploration, with easily navigable streets and a welcoming atmosphere.



Our first stop was the magnificent Castillo San Felipe del Morro, a UNESCO World Heritage Site and an iconic symbol of San Juan. From the moment you pass through its grand gates to the dizzying heights of its ancient battlement walls, every vista offers breathtaking views of the vast Atlantic Ocean, the sprawling city of San Juan, and the stunning architecture of the fort itself. The history embedded in its stone walls is palpable, offering a profound sense of the island’s strategic past and its enduring beauty.


From the fort, we embarked on a pleasant stroll through the charming streets of Old San Juan, eventually making our way to Punto de Vista. This rooftop restaurant, with its inviting open-air seating, proved to be a culinary highlight. Their mojitos were expertly crafted, and I can confidently say I experienced the best beef mofongo of my life there – a dish that was truly unforgettable. The savory salt cod fritters and crispy croquettes were equally memorable, adding to a feast of authentic Puerto Rican flavors.


Though certainly not hungry, we decided to cap off our delightful walking tour of Old San Juan—which was, quite frankly, gorgeous at every turn—with something refreshing. We stumbled into Señor Paleta and instantly fell in love with their artisanal icy popsicles, or paletas. They offered a tempting selection of a couple dozen unique and mouthwatering varieties, all made with natural ingredients. I chose a Strawberry Mojito paleta, which provided the perfect cool relief and left me feeling utterly content as we made our way back to the ship, carrying sweet memories of San Juan.


The Perfect Palate Cleanser: Grapefruit Sorbet
Speaking of things that bring immense joy, it’s time to delve into the star of today’s culinary discussion: this incredible Grapefruit Sorbet recipe. This isn’t just any sorbet; it’s a symphony of pure, wonderfully puckery yet perfectly sweet grapefruit goodness, boasting an ultra-smooth, silky texture devoid of any unwelcome ice crystals. The beauty of this recipe lies in its versatility: you can effortlessly churn it in an ice cream maker for classic perfection or, if you don’t have one, freeze the mixture into ice cubes and then blitz them to a glorious consistency in a food processor or blender.

Sorbet is a wonderfully elegant and light way to conclude any meal. It offers a dessert experience that is inherently satisfying without being overly sweet, making it an especially excellent choice after a heavier meal or on a particularly hot day when you crave something truly refreshing. The fundamental key to achieving an exceptional grapefruit sorbet lies in the quality of your ingredients: always start with fresh grapefruits and juice them yourself. Bottled grapefruit juice, while convenient, simply cannot replicate the vibrant, authentic flavor and zest that freshly squeezed juice imparts to the sorbet.
Many homemade sorbets can sometimes suffer from textural issues, such as freezing too firm or developing undesirable large ice crystals. Our Grapefruit Sorbet, however, bypasses these common pitfalls thanks to a clever, not-so-secret ingredient: gin. The alcohol content in gin plays a crucial role in keeping the ice crystals remarkably small, resulting in a sorbet that remains beautifully scoopable, even if you happen to forget it in the back of your freezer for a few weeks (don’t ask me how I know!). If the distinctive juniper notes of gin aren’t to your liking, vodka makes an excellent and equally effective substitute. Using either spirit transforms the sorbet into a delightful frozen Greyhound cocktail experience.
For those who prefer to omit the liquor, you absolutely can! However, to maintain that desired lovely, silky texture, you’ll want to increase the quantity of corn syrup by 2 tablespoons. This adjustment is necessary because alcohol effectively lowers the hard-freeze temperature of the sorbet, thereby preventing the formation of large, crunchy ice crystals. Corn syrup provides a similar anti-crystalizing effect, ensuring your resulting sorbet remains wonderfully smooth and luxurious. Should you wish to replicate the sophisticated palate cleanser experience we enjoyed at the Chef’s Table, simply pour a shot of gin or vodka over a generous scoop of this exquisite Grapefruit Sorbet in a small bowl, serving it elegantly between courses or as a light, refreshing dessert. It’s a simple touch that elevates the entire dining experience.

Grapefruit Sorbet

Crisp, refreshing, smooth and silky in texture, this grapefruit sorbet makes a great dessert by itself or cocktail when doused with a shot of gin or vodka.
Equipment
- ice cream maker (optional)
- freezer
- small saucepan
- food processor or blender (if not using an ice cream maker)
Ingredients (Serves 8)
- 3 cups freshly squeezed grapefruit juice
- 2 tablespoons light corn syrup
- 2/3 cup granulated sugar
- 1/4 cup gin or vodka (optional, see notes for substitution)
Instructions
- In a small saucepan, combine 1 cup of the grapefruit juice with the sugar and corn syrup. Heat over low heat, stirring gently until the sugar is fully dissolved. Do not boil.
- Remove from heat and stir this sugar mixture into the remaining 2 cups of grapefruit juice. If using, stir in the gin or vodka.
- Chill the mixture thoroughly in the refrigerator for at least 1-2 hours (or until very cold) before proceeding.
- If using an ice cream maker: Churn the sorbet according to your ice cream maker’s manufacturer instructions. Once churned, scrape the soft sorbet into a freezer-safe container with a tight-fitting lid and freeze for at least 3 hours (or until firm enough to scoop).
- To make without an ice cream maker: Pour the thoroughly chilled mixture into ice cube trays and freeze until solid (at least 3-4 hours, or overnight).
